Setup and Sanitation

Proper sanitation is critical for successful brewing. Always clean and sanitize all equipment that will come into contact with your wort or beer.

1. Cleaning

Before sanitizing, ensure all equipment is free of visible dirt and debris. Use the provided Oxygen Wash cleaner according to its instructions. Rinse thoroughly with clean water.

2. Sanitizing

After cleaning, sanitize all equipment that will contact the wort after boiling. This includes the fermentor, lid, airlock, bottling bucket, tubing, bottle filler, hydrometer, and test jar. Follow the sanitizer instructions carefully. Do not rinse after sanitizing unless specified by the sanitizer's instructions.

Brew Day

  1. Steeping Grains: Place the specialty grains from your recipe kit into a grain bag. Steep in hot water (typically 150-170°F or 65-77°C) in your brew kettle for the recommended time. This extracts color and flavor. Remove the grain bag, allowing it to drain without squeezing.
  2. Boiling the Wort: Add the malt extract (liquid and/or dry) to the brew kettle with the steeped water. Bring the mixture to a rolling boil. This mixture is now called wort.
  3. Hop Additions: Follow your recipe for specific hop additions. Hops are added at different times during the boil to contribute bitterness, flavor, and aroma.
  4. Cooling: After the boil, rapidly cool the wort to fermentation temperature (typically 65-70°F or 18-21°C). This can be done using an ice bath or a wort chiller (not included in this kit).
  5. Transfer to Fermentor: Carefully transfer the cooled wort to your sanitized 6.5-gallon fermentor.
  6. Pitching Yeast: Once the wort is at the correct temperature, add the yeast from your recipe kit. Secure the lid on the fermentor and insert the bubbler airlock, filled with sanitized water, into the lid.

Fermentation

Store the fermentor in a cool, dark place with a stable temperature (as recommended by your recipe, typically 65-70°F or 18-21°C). Fermentation usually takes 1-2 weeks. The airlock will bubble as CO2 is released. Once bubbling slows or stops, fermentation is likely complete.

Bottling

  1. Prepare Bottles: Ensure all bottles are clean and sanitized.
  2. Prepare Priming Sugar: Dissolve the priming sugar (corn sugar) from your kit in a small amount of boiling water, then cool. Add this solution to your sanitized bottling bucket.
  3. Transfer Beer: Carefully transfer the fermented beer from the fermentor to the bottling bucket using the clear tubing and bottle filler. Avoid disturbing the yeast sediment at the bottom of the fermentor. The priming sugar will mix evenly with the beer.
  4. Fill Bottles: Attach the bottle filler to the spigot of the bottling bucket. Fill each bottle, leaving about an inch of headspace.
  5. Cap Bottles: Use the Royal Crown Bottle Capper to securely seal each bottle with a cap.
  6. Conditioning: Store the capped bottles in a dark place at room temperature (65-75°F or 18-24°C) for 1-2 weeks. This allows the yeast to consume the priming sugar and carbonate the beer naturally.

Cleaning Equipment

After each use, thoroughly clean all equipment with the Oxygen Wash and the bottle brush. Rinse well to remove all cleaning solution residue.

Storage

Store all clean and dry equipment in a cool, dry, and dark place to prevent degradation and contamination. Ensure fermentors and bottling buckets are completely dry before sealing to prevent mold growth.
