Initial Setup and First Use
Unpacking
Carefully remove all packaging materials, including any labels or stickers. Retain the packaging for future storage or transport if needed.
Before First Use
- Clean Components: Wash the removable cookwell, lid, and roasting rack in warm, soapy water. Rinse thoroughly and dry completely. The cookwell is dishwasher safe.
- Seasoning (Optional but Recommended): For optimal performance and to prevent sticking, some users choose to season the cookwell. Lightly coat the interior of the cookwell with cooking oil. Place the cookwell back into the roaster base. Set the temperature to 350°F (175°C) and operate for approximately 30-60 minutes. Allow to cool completely, then wipe away any excess oil. This process may produce some smoke and odor; ensure adequate ventilation.
- Initial Burn-Off: Before cooking food, operate the empty roaster oven (with the cookwell and lid in place) at its maximum temperature setting (450°F) for about 1 hour. This helps to burn off any manufacturing residues and odors. Ensure the area is well-ventilated during this process.
Operating Instructions
Temperature Control
The NESCO MWR18-14 features an adjustable thermostat with a temperature range from 200°F to 450°F. Turn the control knob to select the desired temperature for your recipe. The indicator light will illuminate when the heating element is active and turn off once the set temperature is reached.
Preheating
For best results, preheat the roaster oven to the desired temperature before adding food. Place the empty cookwell and lid into the roaster base, then set the temperature. Allow approximately 15-20 minutes for the roaster to reach the set temperature.
General Roasting
- Preheat the roaster oven to the recommended temperature.
- Place the roasting rack into the cookwell.
- Place food (e.g., poultry, meat) on the roasting rack. This allows for even heat circulation and prevents the food from sitting in drippings.
- Cover with the lid.
- Cook for the recommended time, checking internal temperature with a meat thermometer for doneness.
Baking
The roaster oven can be used for baking items such as casseroles, breads, and desserts. Adjust baking times and temperatures as needed, as roaster ovens can sometimes cook faster than conventional ovens.
Steaming
To steam vegetables or other foods, add a small amount of water (approximately 1-2 cups) to the bottom of the cookwell. Place food on the roasting rack, ensuring it is above the water level. Cover and set the temperature to 300-350°F until food is tender.
Slow Cooking
For slow cooking, set the temperature to a lower setting, typically between 200°F and 250°F. This is ideal for stews, chili, and pot roasts. Cooking times will vary depending on the recipe.
Care and Maintenance
Cleaning the Cookwell and Rack
After each use, allow the roaster oven to cool completely. Remove the cookwell and roasting rack. These components can be washed by hand with warm, soapy water and a non-abrasive sponge or placed in a dishwasher. Ensure all food residues are removed.
Cleaning the Exterior
Wipe the exterior of the roaster base with a damp cloth. Do not immerse the roaster base in water or any other liquid. Do not use abrasive cleaners or scouring pads, as they may damage the finish.
Storage
Ensure all parts are clean and dry before storing. Store the roaster oven in a cool, dry place. The lid and rack can be stored inside the cookwell for compact storage.
