1. Introduction

Thank you for choosing the ROVSUN 22.8QT Commercial Deep Fryer. This appliance is designed for efficient and safe deep frying in commercial settings, offering a large capacity and precise temperature control. To ensure optimal performance and safety, please read this manual carefully before operation and retain it for future reference.

2. Important Safety Instructions

Always follow basic safety precautions when using electrical appliances to reduce the risk of fire, electric shock, and injury.

  • Read all instructions before using the deep fryer.
  • Do not touch hot surfaces. Use handles or knobs.
  • To protect against electrical shock, do not immerse cord, plugs, or heating elements in water or other liquid.
  • Close supervision is necessary when any appliance is used by or near children.
  • Unplug from outlet when not in use and before cleaning. Allow to cool before putting on or taking off parts.
  • Do not operate any appliance with a damaged cord or plug, or after the appliance malfunctions or has been damaged in any manner.
  • The deep fryer requires at least a 16A outlet to support its power requirements. Ensure your electrical supply meets this specification.
  • Do not use outdoors.
  • Do not let cord hang over edge of table or counter, or touch hot surfaces.
  • Do not place on or near a hot gas or electric burner, or in a heated oven.
  • Extreme caution must be used when moving an appliance containing hot oil or other hot liquids.
  • Always attach plug to appliance first, then plug cord into the wall outlet. To disconnect, turn any control to "off", then remove plug from wall outlet.
  • Do not use appliance for other than intended use.
  • Lid prevents boiled oil splashing. Use the provided lid during operation.
  • Fryer basket with plastic handle prevents scalding. Always use the basket handle for safe operation.

3. Product Components

The ROVSUN 22.8QT Commercial Deep Fryer consists of several key components designed for ease of use and maintenance.

  • Control Heads: Dual electrical heads with independent temperature controls.
  • Heating Tubes: U-shaped stainless steel heating tubes for even heat distribution.
  • Oil Tanks: Two thickened, detachable stainless steel tanks for oil.
  • Frying Baskets: Two baskets with plastic handles for safe food handling.
  • Lids: Two lids to prevent oil splashing during frying.
  • Guard Plate: A plate positioned above the heating elements.
  • Foot Pads: Non-slip feet for stability.

4. Setup and Initial Use

  1. Unpacking: Carefully remove all packaging materials. Inspect the fryer for any damage.
  2. Protective Film Removal: There are white protective films on the surface of the stainless steel components. Please peel off these films completely before first use.
  3. Initial Cleaning: Before first use, wash the oil tanks, frying baskets, lids, and guard plates with warm, soapy water. Rinse thoroughly and dry completely. Wipe down the exterior of the main unit with a damp cloth.
  4. Placement: Place the deep fryer on a stable, heat-resistant, and level surface. Ensure there is adequate ventilation around the unit.
  5. Assembly:
    • Insert the empty oil tanks into the main unit.
    • Place the heating element assemblies (control heads) securely over the oil tanks. Ensure they are properly seated.
    • Insert the guard plates into the oil tanks, below the heating elements.
    • Place the frying baskets into the oil tanks.
  6. Power Connection: Ensure the power switches are in the "OFF" position. Plug the power cords into separate, grounded 16A (or higher) electrical outlets.

5. Operating Instructions

  1. Fill with Oil: Pour cooking oil into each tank. The recommended oil capacity for each tank is up to 6.85QT (6.5L), with a total maximum capacity of 22.8QT (21.6L) for both tanks combined. Do not overfill or underfill. Ensure the oil level is between the MIN and MAX marks inside the tank.
  2. Set Temperature: Turn the temperature knob for each tank to the desired frying temperature. The temperature range is 60℃ - 200℃ (140℉ - 392℉). The temperature indicator light will illuminate, indicating that the fryer is heating the oil.
  3. Preheating: Allow the oil to preheat until the temperature indicator light turns off, signifying that the set temperature has been reached. This typically takes about 10 minutes.
  4. Frying Food:
    • Carefully place food into the frying baskets. Do not overload the baskets, as this can lower oil temperature and result in soggy food.
    • Slowly lower the baskets into the hot oil.
    • Place the lids on the tanks to prevent oil splashing.
    • Fry food until it reaches the desired crispness and color. Common items include buffalo wings, chicken, dumplings, egg rolls, shrimp rolls, mozzarella sticks, and jalapeno poppers.
    • The dual tank design allows you to fry different foods simultaneously at different temperatures, optimizing efficiency.
  5. Removing Food: Once cooked, carefully lift the baskets from the oil. Allow excess oil to drain back into the tank.
  6. Power Off: When finished frying, turn the temperature knobs to the "OFF" position and unplug the unit from the electrical outlets.

6. Maintenance and Cleaning

Regular cleaning and maintenance will extend the life of your deep fryer and ensure safe operation. Always ensure the unit is unplugged and completely cooled before cleaning.

  1. Cool Down: Allow the oil to cool completely before attempting to clean. This may take several hours.
  2. Drain Oil: Carefully remove the cooled oil from the tanks. Dispose of used oil responsibly according to local regulations.
  3. Disassembly: The control heads (with heating elements) can be rotated or lifted for easy removal. The oil tanks are detachable. Remove the frying baskets and guard plates.
  4. Cleaning Components: Wash the detachable oil tanks, frying baskets, lids, and guard plates with warm, soapy water. Use a non-abrasive sponge or cloth to prevent scratching the stainless steel. Rinse thoroughly and dry completely.
  5. Cleaning Main Unit: Wipe the exterior of the main unit and the control heads with a damp cloth. Do not immerse the control heads or the main unit in water. Ensure no water enters the electrical components.
  6. Stubborn Residue: For stubborn oil residue, a mild degreaser designed for kitchen appliances can be used. Follow the product instructions for the degreaser.
  7. Reassembly: Once all parts are clean and dry, reassemble the fryer. Ensure all components are correctly in place before next use.

7. Troubleshooting

If you encounter issues with your deep fryer, refer to the following common problems and solutions:
