Setup

  2. Clean Carafe: Wash the glass carafe thoroughly with warm soapy water, then rinse and dry completely. Do not wash the power base.
  3. Position: Place the power base on a dry, stable, and level surface.
  4. Connect Power: Plug the power cord into a 120V AC power outlet. The display will illuminate.
  5. Place Carafe: Carefully place the clean, empty glass carafe onto the power base, ensuring it is seated correctly.

Operating Instructions

The Breville The Sommelier uses 90% pure oxygen to accelerate the decanting process. One minute of oxygenation is equivalent to approximately one hour of traditional decanting.

  1. Pour Wine: Carefully pour your wine into the glass carafe. Do not overfill past the maximum fill line.
  2. Set Decanting Time: Use the rotary dial on the power base to set the desired oxygenation time. The display shows "DECANTING TIME" in minutes and seconds. Refer to the Breville app for recommended decanting times based on wine type, region, and vintage.
  3. Start Oxygenation: Press the START button. The appliance will begin the oxygenation process, and the display will show a countdown. You will observe bubbles rising through the wine.
  4. Monitor Progress: The display will show the remaining oxygenation time.
  5. Completion: Once the set time has elapsed, the appliance will automatically stop. A chime may sound to indicate completion.
  6. Serve: Carefully remove the carafe from the power base and serve the oxygenated wine.
  7. Stop/Reset: To stop the oxygenation process prematurely or to reset the timer, press the STOP/RESET button.

Using with Spirits

The Sommelier can also be used to enhance spirits like whiskey or cognac. For this purpose, a smaller 200ml carafe (sold separately) is recommended. Follow the same operating steps, adjusting the oxygenation time as desired for your specific spirit.

Maintenance and Cleaning

  • Carafe Cleaning: After each use, empty any remaining wine. Wash the glass carafe by hand with warm soapy water.
