Setup and First Use
- Unpacking: Carefully remove all packaging materials and accessories from the bread maker.
- Cleaning: Before first use, wash the bread pan, kneading paddle, measuring cup, and spoon in warm, soapy water. Rinse thoroughly and dry all parts. Wipe the exterior of the bread maker with a damp cloth.
- Initial Burn-Off: To eliminate any manufacturing odors, place the empty bread pan (with kneading paddle inserted) into the bread maker. Close the lid. Select the "Bake" cycle (usually program 13) and run for 10 minutes. Allow the unit to cool completely before proceeding.
- Placement: Place the bread maker on a stable, flat, heat-resistant surface, away from direct sunlight and heat sources. Ensure adequate ventilation around the unit.

Operating Instructions
The Hamilton Beach Bread Maker features 14 programmed settings for various bread types and functions. Follow these general steps for operation:
- Insert Kneading Paddle: Ensure the kneading paddle is securely inserted onto the shaft at the bottom of the bread pan.
- Add Ingredients: Add ingredients to the bread pan in the order specified by your recipe (typically liquids first, then dry ingredients, with yeast last). Make a small indentation in the dry ingredients for the yeast.
- Place Bread Pan: Securely place the bread pan into the bread maker. Close the lid.
- Select Program: Press the "MENU" button to cycle through the 14 available programs. Refer to the list on the lid for program descriptions.
- Select Loaf Size: Press the "LOAF SIZE" button to choose between 1 lb, 1.5 lb, or 2 lb loaf sizes.
- Select Crust Shade: Press the "CRUST COLOR" button to select light, medium, or dark crust.
- Delay Timer (Optional): To delay the start of the baking process, use the "+" and "-" buttons to set the desired delay time.
- Start: Press the "START/STOP" button to begin the selected program. The display will show the remaining time.
- Automatic Keep Warm: After baking, the bread maker will automatically switch to a "Keep Warm" cycle for 1 hour.
Understanding Program Cycles:
- Basic: For white and mixed breads.
- French: For light, airy breads with a crispy crust.
- Gluten-Free: Specifically designed for gluten-free recipes.
- Whole Grain: For breads made with whole wheat flour.
- 1.5 lb Express / 2 lb Express: Faster cycles for when time is limited. Note: Bread may be less fluffy than standard cycles.
- Quick Bread: For breads that do not require yeast (e.g., banana bread, zucchini bread).
- Sweet: For yeast breads with added dried fruits or nuts. The machine will beep to indicate when to add these ingredients.
- Dough: Prepares dough for pizza, rolls, or other baked goods to be cooked in a conventional oven. It mixes, kneads, and rises but does not bake.
- Cake: For cakes that use baking soda or baking powder instead of yeast.
- Jam: Prepares homemade jams from fresh fruit.
- Rise: Allows dough to rise without kneading or baking. Useful for frozen dough.
- Bake: For baking pre-prepared dough or for additional browning.
- Artisan Dough: For sourdough and other specialty doughs that require a long, cool rise. No heating is involved in this cycle.

Maintenance and Cleaning
Proper maintenance ensures the longevity and performance of your bread maker.
- Unplug: Always unplug the bread maker from the power outlet and allow it to cool completely before cleaning.
- Bread Pan and Kneading Paddle: The non-stick bread pan and kneading paddle are dishwasher safe. For best results and to preserve the non-stick coating, hand wash with warm, soapy water. If the kneading paddle is stuck in the bread, allow the bread to cool slightly, then use the included paddle removing tool to carefully extract it.
- Exterior: Wipe the exterior of the bread maker with a damp cloth. Do not immerse the unit in water or any other liquid.
- Interior: Clean the interior of the baking chamber with a damp cloth. Do not use abrasive cleaners or scouring pads.
Troubleshooting
| Problem | Possible Cause | Solution |
|---|---|---|
| Bread does not rise or rises poorly. | Expired yeast, incorrect water temperature, too much salt/sugar, incorrect flour type for selected program. | Ensure yeast is fresh. Use lukewarm water (105-115°F / 40-46°C). Measure ingredients precisely. Use appropriate flour for the cycle. |
| Bread is too dense. | Too much flour, not enough liquid, old yeast, or incorrect program (e.g., using Express for a recipe needing full rise). | Accurately measure flour. Adjust liquid slightly if dough appears too dry during kneading. Use fresh yeast. Select appropriate program for desired texture. |
| Kneading paddle stuck in bread. | Normal occurrence due to paddle position during baking. | Allow bread to cool slightly. Use the provided paddle removing tool to carefully extract the paddle. A small hole will remain. |
| Machine "walks" on counter during kneading. | Vibration during vigorous kneading cycles. | Place the bread maker on a stable, non-slip surface. Ensure it is not too close to the edge of the counter. |
