Setup
Charging the Unit
The Cuisinart Cordless Electric Knife is powered by two 7.8-volt lithium batteries. Before first use, fully charge the unit using the provided AC adapter. A 30-minute quick-charge feature is available for convenience. A full charge provides up to 20 minutes of continuous run time.
Blade Assembly
- Ensure the knife handle is unplugged from any power source.
- Select the desired blade set (serrated for meat/bread or straight-edge for fruit/vegetables/fish).
- Align the two blade pieces and gently slide them together until they snap securely.
- Insert the assembled blade into the knife handle until it clicks into place. Ensure it is firmly seated.

Operating Instructions
Powering On/Off
- With the desired blade securely attached, ensure the unit is charged.
- To activate the knife, slide the safety lock/unlock button forward (towards the blade) and simultaneously press the power trigger located on the underside of the handle.
- The blades will begin to reciprocate. Release the power trigger to turn off the knife. The safety lock will automatically re-engage.

- For Meats and Breads: Use the serrated blade. Apply gentle pressure and let the reciprocating action of the blades do the work. Guide the knife through the food, maintaining an even pace for uniform slices.
- For Fruits, Vegetables, and Filleting Fish: Use the straight-edge blade. This blade is designed for delicate tasks, allowing for clean, precise cuts without tearing.
- Always use a stable cutting surface. For carving meats, the included carving fork can be used to hold the food securely.

Maintenance and Cleaning
Disassembly for Cleaning
- Ensure the knife is unplugged and turned off.
- Locate the blade release button on the side of the handle. Press this button and gently pull the blade set out of the handle.
- Separate the two blade pieces by sliding them apart.
Cleaning Instructions
- The stainless steel blades are dishwasher-safe. For best results, wash them on the top rack.
- The knife handle (motor housing) should be cleaned by hand with a damp cloth. Do not immerse the handle in water or any other liquid.
