Setup

The Sharp Pebble whetstone features two sides with different grit levels:
- 1000 Grit (Blue Side): This coarse side is used for sharpening dull or damaged blades, establishing a new edge, or repairing minor chips.
- 6000 Grit (White Side): This fine side is used for honing and polishing the blade to a razor-sharp finish.
Sharpening Process:
- Start with 1000 Grit: Place the knife blade (with angle guide attached, if desired) on the 1000-grit side of the wet stone. Maintain a consistent angle (typically 15-20 degrees for most kitchen knives).
- Apply Pressure and Stroke: Apply light, consistent pressure and push the blade across the stone, moving from the heel to the tip. Repeat this motion, pulling the blade towards you. Perform an equal number of strokes on both sides of the blade to ensure an even edge. Continue until a burr (a slight curl of metal) forms on the opposite side of the edge.
- Transition to 6000 Grit: Once the burr is established, switch to the 6000-grit side. Repeat the sharpening motion with lighter pressure to refine the edge and remove the burr. This step polishes the blade for a smooth, sharp finish.
