4. Setup

Proper setup of your 3-sink system is crucial for effective glassware cleaning and sanitization. Follow these steps to prepare your sinks:

  1. Clean Sinks and Brushes: Thoroughly clean all three sinks and ensure brushes are not worn. Replace worn brushes as needed.
  2. First Sink (Wash):
    • Fill the first tank with hot or cold water almost to the top of the brushes.
    • If needed, add Beer Clean™ Mineral Solvent based on local water-hardness conditions.
    • Add one pre-measured packet of BEER CLEAN 990224 Low Suds Glass Cleaner to the first sink, sprinkling it over the brushes.
  3. Second Sink (Rinse):
    • Fill the second tank with clean, continuously flowing hot or cold water. This tank is used to rinse off detergent from glassware.
  4. Third Sink (Sanitize):
    • Fill the third sink with three gallons (11.5 liters) of hot or cold water.
    • Add ¼ oz. of Beer Clean™ Last Rinse Sanitizer.

5. Operating Instructions (Glass Washing Process)

Once your 3-sink system is set up, follow these steps for washing, rinsing, and sanitizing your glassware:

  1. Wash:
    • Wash glasses in the first sink, ensuring all glass edges come into contact with the brushes.
    • If using a three-brush manual system, clean glasses on the center brush.
  2. Rinse:
    • Rinse glassware in the second sink by placing the bottom of the glass in the water first, at an angle. This "heel in, heel out" technique prevents air pockets that can hinder complete rinsing.
    • Withdraw the glass at an angle, bottom first.
    • Note: If you have only a two-tank system, do not include a separate rinse sink.
  3. Sanitize:
    • Submerge glassware in the sanitizing rinse solution (third sink) using the "heel in, heel out" technique.
    • Allow glasses to remain immersed for at least 2 minutes.
    • Always follow national food service sanitation guidelines and local health codes for sanitizing.
  4. Air Dry:
    • Air dry sanitized glassware upside down on a deeply corrugated drain board to allow maximum air flow.
    • DO NOT dry glasses with a towel, as it can leave lint and transfer germs and odors.
    • DO NOT store glasses on a towel, rubber drain pad, or any smooth surface, as this can trap germs and moisture.

6. Maintenance

To maintain optimal cleaning performance and hygiene, regular maintenance of your glassware washing system is essential:

  • Clean Sinks: Thoroughly clean all sinks with a small amount of glassware cleaner before each washing session.
  • Inspect and Replace Brushes: Regularly inspect the brushes in your wash sink for wear. Replace worn brushes to ensure effective cleaning.
  • Change Chemicals: Change the cleaning and sanitizing solutions in your sinks once per shift, or as required by local health codes and sanitation guidelines.

7. Troubleshooting: How to Verify Glass Cleanliness

Ensure your glassware is perfectly clean by performing these simple tests:

Sheeting Test:

  • Nearly Clean: Water forms droplets on the glass surface.
  • Perfectly Clean: Water sheets away evenly from the glass surface.

Salt Test:

  • Nearly Clean: Salt sprinkled inside falls to the bottom or clings in random patterns.
  • Perfectly Clean: Salt adheres evenly to the glass surface.

Bubble Test (for beer glasses):

  • Nearly Clean: Beer forms "fisheye" bubbles, and the head disappears quickly.
  • Perfectly Clean: Beer is sparkling clear, and the head is creamy and thick.

Lacing Test (for beer glasses):

  • Nearly Clean: Foam left in the glass hangs loose or slides away.
  • Perfectly Clean: Foam forms parallel rings with each sip.

Video: This video illustrates the four easy ways to check if your glassware is perfectly clean: sheeting, salt, bubble, and lacing tests.
