1. Introduction

This manual provides comprehensive instructions for the installation, operation, and maintenance of your Bravilor Bonamat 8.040.058.21004-208V Single Tank Thermal Coffee High Brewer. This high-quality stainless steel brewer is designed for commercial use, offering efficient coffee brewing with precise control features.

2. Safety Information

Always observe basic safety precautions when using electrical appliances to reduce the risk of fire, electric shock, and injury to persons.

• Read all instructions before operating the appliance.
• Do not touch hot surfaces. Use handles or knobs.
• To protect against fire, electric shock, and injury, do not immerse cord, plugs, or the appliance in water or other liquid.
• Close supervision is necessary when any appliance is used by or near children.
• Unplug from outlet when not in use and before cleaning. Allow to cool before putting on or taking off parts, and before cleaning the appliance.

4. Setup and Installation

Proper installation is crucial for the performance and longevity of your brewer. This unit requires a 208V electrical connection.

1. Unpacking: Carefully remove the brewer from its packaging. Retain packaging for future transport or storage.
2. Placement: Place the brewer on a stable, level surface, away from heat sources and direct sunlight. Ensure adequate ventilation around the unit.
3. Electrical Connection: Connect the brewer to a dedicated 208V/21A/4400W electrical outlet. Consult a qualified electrician if unsure about the electrical requirements.
4. Water Connection: Connect the brewer to a potable cold water supply using appropriate plumbing. Ensure all connections are secure and leak-free.
5. Initial Rinse: Before first use, run several cycles of plain water through the brewer to flush out any manufacturing residues. Do not add coffee grounds during this process.

5. Operating Instructions

Follow these steps to brew coffee and dispense hot water.

5.1. Brewing Coffee

1. Power On: Ensure the brewer is properly connected to power and water, then turn on the main power switch.
2. Prepare Filter: Place a new filter into the filter holder.
3. Add Coffee Grounds: Add the desired amount of fresh coffee grounds to the filter. Refer to your coffee supplier's recommendations for optimal ratios.
4. Place Carafe: Ensure the thermal carafe is correctly positioned under the brewing head.
5. Select Settings: Use the touchscreen control panel to select your desired batch size, pre-infusion, and pulse brew settings. The brewer allows for variable batch sizes.
6. Start Brewing: Press the "START" button on the control panel. The brewing process will begin.
7. Monitor: Brewing a 1.5-gallon batch typically takes 4 to 8 minutes.
8. Serve: Once brewing is complete, carefully remove the thermal carafe for serving.

5.2. Dispensing Hot Water

• Ensure the brewer is powered on and the hot water tank is filled.
• Place a cup or container under the hot water tap.
• Operate the electronically controlled hot water dispense valve to release hot water.
• Close the valve when the desired amount of hot water is dispensed.

6. Maintenance and Cleaning

Regular cleaning and maintenance will ensure the longevity and optimal performance of your brewer.

6.1. Daily Cleaning

• Unplug: Always unplug the brewer and allow it to cool before cleaning.
• Discard Grounds: Remove and discard used coffee grounds and filter.
• Clean Filter Holder: Wash the filter holder with warm, soapy water. Rinse thoroughly.
• Clean Carafe: Wash the thermal carafe with warm, soapy water. Use a brush if necessary to remove coffee residue. Rinse thoroughly.
• Wipe Exterior: Wipe down the exterior stainless steel surfaces with a damp cloth. Do not use abrasive cleaners or scouring pads.
• Clean Drip Tray: Remove and empty the drip tray. Wash with warm, soapy water and rinse.

6.2. Descaling (Monthly or as needed)

Mineral deposits from water can build up over time, affecting performance. Descale regularly based on water hardness and usage.

1. Use a commercial descaling solution designed for coffee brewers, following the manufacturer's instructions.
2. Run the descaling solution through a brew cycle (without coffee).
3. After descaling, run several cycles of plain water to thoroughly rinse the system.
