  • Stage 1 (Electric Sharpening): Utilizes 100% diamond abrasives to shape the first bevel of the knife edge.
  • Stage 2 (Electric Sharpening): Also uses 100% diamond abrasives to sharpen the second bevel, further refining the edge.
  • Stage 3 (Manual Honing/Polishing): Features ultra-fine diamonds to hone and polish the third bevel, creating a razor-sharp, arch-shaped edge. This stage can also be used for sharpening serrated knives.

Setup

  1. Place the sharpener on a stable, flat surface.
  2. Ensure the power switch is in the 'OFF' position.
  3. Plug the power cord into a standard 120V AC outlet.
  4. Turn the power switch to the 'ON' position. The sharpener is now ready for use.

Operating Instructions

Always hold the knife with a firm grip. Apply only light downward pressure when sharpening. Excessive pressure can slow the motor and is not necessary for effective sharpening.

Sharpening Straight Edge Knives (Initial Sharpening or Very Dull Knives)

  1. Stage 1 (Electric): Insert the knife blade into the left slot of Stage 1. Pull the knife towards you, maintaining a consistent speed. Repeat this 3-4 times for each side of the blade (left and right slots of Stage 1).
  2. Stage 2 (Electric): Move to Stage 2. Insert the knife blade into the left slot of Stage 2. Pull the knife towards you, maintaining a consistent speed. Repeat this 3-4 times for each side of the blade (left and right slots of Stage 2).
  3. Stage 3 (Manual): Finish with Stage 3. Insert the knife blade into the left slot of Stage 3. Pull the knife towards you, applying very light pressure. Repeat this 2-3 times for each side of the blade (left and right slots of Stage 3). This stage hones and polishes the edge.

Sharpening Serrated Knives

Serrated knives should only be sharpened in Stage 3 (manual). This stage hones the knife's 'teeth' without grinding away the serrations.

  1. Insert the serrated knife blade into the left slot of Stage 3.
  2. Pull the knife towards you, applying very light pressure. Repeat this 5-10 times for each side of the blade (left and right slots of Stage 3).
  3. Focus on sharpening the serrations, not the entire blade length.

Honing and Polishing (For Already Sharp Knives)

For knives that are already sharp but need a quick touch-up, use only Stage 3.

  1. Insert the knife blade into the left slot of Stage 3.
  2. Pull the knife towards you, applying very light pressure. Repeat this 1-2 times for each side of the blade (left and right slots of Stage 3).

Maintenance

  • Always unplug the sharpener before cleaning.
  • Wipe the exterior of the sharpener with a damp cloth. Do not use abrasive cleaners or immerse the unit in water.
  • The sharpening modules are designed to be self-cleaning to a degree, but occasional light brushing with a dry, soft brush can remove any accumulated metal dust.
  • Store the sharpener in a dry place.

Troubleshooting

  • Sharpener does not turn on: Ensure the power cord is securely plugged into a working outlet and the power switch is in the 'ON' position.
  • Knives are not sharpening effectively: Ensure you are following the correct sharpening sequence for straight or serrated knives. Apply light, consistent pressure and pull the knife through at a steady speed. Very dull knives may require additional passes through Stages 1 and 2.
  • Excessive noise during operation: This may indicate too much downward pressure on the knife blade. Reduce pressure. If the noise persists, ensure no debris is lodged in the sharpening slots.
