Operating Instructions

Follow these steps for optimal performance and consistent biscuit shapes.

  1. Prepare Dough: Ensure your biscuit dough is of the correct consistency. It should be firm enough to hold its shape but soft enough to be extruded. Avoid overly sticky or stiff dough.
  2. Select Disc: Choose one of the 20 included discs based on your desired biscuit shape. Insert the chosen disc into the bottom cap of the press.
  3. Load Dough: Unscrew the bottom cap and pull the plunger rod all the way up. Fill the barrel of the press with dough. Do not overfill.
  4. Attach Cap: Screw the bottom cap with the selected disc firmly onto the barrel.
  5. Adjust Thickness: The press features two settings for biscuit thickness. Adjust the lever on the handle to select the desired thickness.
  6. Press Biscuits: Place the bottom of the press directly onto an ungreased baking sheet. Press the trigger handle firmly and evenly to extrude the dough. Lift the press straight up once the biscuit is formed. Repeat for desired quantity.

Maintenance

Proper cleaning and care will extend the life of your Marcato Biscuit Press.

  • Cleaning: After each use, disassemble the press by unscrewing the bottom cap and removing the plunger. Hand wash all parts in warm, soapy water. Use a small brush if necessary to remove any dough residue from the discs or inside the barrel.
  • Drying: Ensure all components are thoroughly dried before reassembly or storage to prevent water spots or corrosion.
  • Storage: Store the biscuit press and discs in a clean, dry place. The original packaging can be used for organized storage.
  • Do Not Dishwash: The anodized aluminum construction is not suitable for dishwasher cleaning. Dishwashing may damage the finish and material.

Troubleshooting

If you encounter issues while using your biscuit press, consider the following common solutions:

ProblemPossible CauseSolution
Dough not extruding or difficult to press.Dough is too stiff or cold.Allow dough to warm slightly to room temperature. Ensure dough consistency is appropriate for a cookie press.
Biscuits not sticking to the baking sheet.Baking sheet is greased or too warm.Always use an ungreased, cool baking sheet. If using multiple sheets, allow them to cool between batches.
Inconsistent biscuit shapes.Uneven pressure or air pockets in dough.Apply steady, even pressure when pressing. Ensure dough is packed firmly into the barrel without large air pockets.
