Please read this manual thoroughly before operation to ensure proper use, safety, and optimal performance of your fryer.
2. Important Safety Information
When using electrical appliances, basic safety precautions should always be followed. This fryer is certified for indoor operation, but caution is still paramount.
- Electrical Safety: Always connect to a properly grounded outlet. Do not immerse cord, plugs, or heating element in water or other liquid.
- Hot Oil Hazard: Oil can reach high temperatures. Exercise extreme caution when handling hot oil. Allow oil to cool completely before moving or cleaning the unit.
- Placement: Operate the fryer on a stable, level, heat-resistant surface. Ensure adequate clearance from walls, cabinets, and other combustible materials.
- Children and Pets: Keep children and pets away from the fryer during operation and while it is cooling. The exterior surfaces can become hot.
- Overfilling: Do not overfill the fryer with oil. This unit is designed to use 33 percent less oil than conventional fryers, reducing the risk of boil-overs.
- Water and Oil: Never allow water to come into contact with hot oil. Ensure food items are thoroughly thawed and dried before placing them into hot oil.

4. Setup
- Unpacking: Carefully remove all components from the packaging. Retain packaging for future storage if desired.
- Initial Cleaning: Wash the cooking basket, inner pot, and lid with warm, soapy water. Rinse thoroughly and dry completely before first use. Wipe the exterior of the fryer with a damp cloth.
- Placement: Place the fryer on a flat, stable, non-combustible surface. Ensure it is not directly under overhead cabinets or near flammable materials.
- Oil Filling: Pour cooking oil (e.g., peanut, canola) into the inner pot. The fryer has an oil capacity suitable for up to a 20-pound turkey. Do not exceed the maximum fill line indicated inside the pot.
- Power Connection: Plug the power cord into a grounded electrical outlet.
5. Operating Instructions
5.1 Frying Turkey
- Prepare Turkey: Ensure the turkey is completely thawed and thoroughly patted dry, both inside and out. Injecting marinades is optional.
- Preheat Oil: Set the temperature control dial to the desired frying temperature (e.g., 375°F for turkey). The 'Power' light will illuminate. The 'Ready' light will turn on when the oil reaches the set temperature.
- Load Turkey: Place the prepared turkey into the cooking basket.
- Lower Turkey: Slowly and carefully lower the basket with the turkey into the hot oil. Use the handle to ensure a controlled descent. Avoid splashing.
- Cook: Close the lid. Fry turkey for approximately 3.5 to 4 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Remove Turkey: Once cooked, slowly and carefully lift the basket from the oil. Hook the drain clip onto the side of the fryer to allow excess oil to drain from the turkey.
- Rest: Remove the turkey from the basket and place it on a cutting board to rest for at least 15-20 minutes before carving.

5.2 Boiling Seafood and Steaming Vegetables
The Masterbuilt Butterball Fryer can also be used for boiling and steaming. For boiling, fill the pot with water to the appropriate level. For steaming, use a steaming rack (not included) above the water level. Place seafood or vegetables in the cooking basket.

6. Cleaning and Maintenance
Proper cleaning and maintenance will extend the life of your fryer.
- Cool Down: ALWAYS allow the oil to cool completely before attempting to clean the fryer. This may take several hours.
- Drain Oil: Once cooled, open the drain valve to carefully drain the oil into a suitable container for disposal or reuse.
- Clean Inner Pot and Basket: Remove the inner pot and cooking basket. Wash them with warm, soapy water. For stubborn residue, a non-abrasive scrubber can be used. Rinse thoroughly and dry completely.
- Clean Exterior: Wipe the exterior surfaces of the fryer with a damp cloth. Do not use abrasive cleaners or immerse the electrical components in water.
- Storage: Store the clean and dry fryer in a cool, dry place.
