5. Operating Instructions: Making Homemade Yogurt

Follow these steps to make delicious homemade yogurt:

  1. Heat the Milk: Heat 50 ounces (1.5 liters) of milk to 180°F (82°C). This step helps to denature the milk proteins, resulting in a thicker yogurt. You can use a saucepan on the stovetop or a microwave-safe bowl in the microwave.
  2. Cool the Milk: Allow the heated milk to cool down to 104°F – 110°F (40°C – 43°C). This temperature range is ideal for the yogurt cultures to thrive. You can place the saucepan in an ice bath or let it cool naturally.
  3. Add Starter: Once the milk has cooled, add your yogurt starter. This can be 6 ounces of plain, unflavored yogurt with live active cultures or a commercial yogurt culture packet.
  4. Mix Thoroughly: Whisk the milk and starter mixture thoroughly until completely incorporated and smooth. This ensures even distribution of the cultures.
  5. Pour into Container: Pour the prepared milk mixture into the removable 50-ounce yogurt container.
  6. Place in Unit: Place the container with its lid securely inside the main yogurt maker unit. Close the clear top lid of the appliance.
  7. Set Fermentation Time: Press the 'Start' button. The digital display will show a default fermentation time (e.g., 8 hours). Use the '+' or '-' buttons to adjust the fermentation time according to your recipe or desired tartness and thickness. Fermentation can range from 6 to 24 hours.
  8. Start Fermentation: Once the desired time is set, the unit will begin the fermentation process. The display will count down the remaining time.
  9. Automatic Cooling: After the fermentation cycle is complete, the yogurt maker will automatically switch to a cooling cycle. The display will show 'C' to indicate cooling. The unit will maintain a cool temperature until it is turned off or unplugged.
  10. Enjoy or Store: Once cooled, your homemade yogurt is ready to enjoy. You can serve it immediately or store it in the refrigerator in its container for later use.

6. Time Settings

The Cuisinart CYM-100 allows you to customize the fermentation time:

  • Default Setting: Upon pressing 'Start', the unit defaults to 8 hours.
  • Adjusting Time: Use the '+' and '-' buttons on the control panel to increase or decrease the fermentation time. You can set it from 6 hours up to 24 hours.
  • Automatic Cooling Indicator: Once fermentation is complete, the unit automatically switches to cooling mode, and the digital display will show 'C'.
  • Stopping Operation: To stop the unit at any time, press and hold the 'Stop' button for approximately 3 seconds.

7. Care and Cleaning

Proper care and cleaning will ensure the longevity of your yogurt maker:

  • Unplug: Always unplug the appliance from the power outlet before cleaning.
  • Removable Parts: The yogurt container and its lid are dishwasher safe (top rack recommended) or can be washed by hand in warm, soapy water.
  • Main Unit: Wipe the exterior of the main unit with a clean, damp cloth. Do not use abrasive cleaners or scouring pads. Never immerse the main unit in water or any other liquid.
  • Storage: Ensure all parts are completely dry before storing. Store the yogurt maker in a cool, dry place.

8. Troubleshooting

If you encounter any issues with your Cuisinart CYM-100, please refer to the following common problems and solutions:

  • Yogurt is too thin/not setting:
    • Ensure milk was heated to 180°F (82°C) and cooled to 104°F – 110°F (40°C – 43°C).
    • Verify your starter yogurt contains live active cultures and is not expired.
    • Increase fermentation time (e.g., from 8 to 10-12 hours) for a thicker consistency.
    • Ensure the milk and starter were thoroughly mixed.
  • Yogurt is too tart:
    • Reduce fermentation time. Shorter fermentation results in milder yogurt.
  • Unit not turning on:
    • Check if the power cord is securely plugged into a working electrical outlet.
    • Ensure the 'Start' button has been pressed.
  • 'C' not appearing after fermentation:
    • The automatic cooling feature should activate. If not, ensure the unit is plugged in and functioning. Contact customer support if the issue persists.
