- Heat and Vent: Place the canner on a heat source. Allow steam to escape steadily from the vent pipe for 10 minutes to ensure all air is removed.
- Apply Pressure Regulator: Place the pressure regulator weight onto the vent pipe. The regulator will begin to rock or jiggle when the desired pressure is reached.
- Process: Maintain the recommended pressure and processing time as specified by your recipe. Adjust heat as necessary to keep the regulator rocking gently.
- Cool Down: After processing, turn off the heat and allow the canner to cool naturally until the pressure indicator drops completely. Do not force cool the canner.
- Open Canner: Once the pressure indicator is down, remove the pressure regulator weight. Carefully open the lid by rotating it counter-clockwise and lifting it away from you to avoid steam burns.
- Remove Jars: Use a jar lifter to remove hot jars and place them on a towel-lined surface to cool for 12-24 hours.
