Introduction
The Zojirushi NP-NVC18 is a 10-cup Induction Heating Pressure Rice Cooker and Warmer designed for optimal rice preparation. This appliance incorporates advanced fuzzy logic technology with Artificial Intelligence (AI) to adapt and refine the cooking cycle, ensuring consistent results. It automatically adjusts between three pressure settings based on the selected menu. The inner cooking pan features a platinum-infused nonstick coating, which enhances water quality to promote better rice absorption and flavor.
Key features include superior Induction Heating (IH) technology, multiple cooking functions for various rice types (including healthy brown rice and GABA brown rice), an Umami setting, a scorch setting, and a steam-reduce setting. The unit is equipped with an easy-to-read colored LCD control panel, clock and timer functions, a delay timer with two settings, and an interchangeable melody or beep signal for cooking cycle completion. It also offers automatic keep warm and extended keep warm functions, along with a detachable and washable stainless-steel inner lid for easy maintenance.

AI Fuzzy Logic Technology
The integrated AI (Artificial Intelligence) allows the rice cooker to learn from previous cooking experiences. It adjusts the cooking process to achieve optimal results, adapting to variations in water and room temperatures. This ensures consistent rice texture regardless of environmental conditions or prolonged use.
Induction Heating (IH) System
Induction Heating technology transforms the entire inner cooking pan into a heat conductor. This method provides higher, more precise, and uniform cooking temperatures compared to conventional heating elements located only at the bottom of the cooker.
IH Pressure System
Pressure cooking occurs in a sealed vessel, preventing air and liquids from escaping below a preset pressure. This allows for higher cooking temperatures, which converts beta starch in rice into alpha starch more effectively. Alpha starch makes rice softer, easier to digest, and fluffier. The unit automatically selects from three pressure levels based on the chosen menu, allowing for varying degrees of firmness.
Pressure Safety Features:
- Pressure Control Valve: Regulates pressure during cooking.
- Safety Valve: Releases excessive pressure if the control valve is obstructed.
- Pressure Indicator: Illuminates on the control panel when pressure is applied, locking the lid.
- Inner Lid Filter: Prevents small particles from clogging valves or the steam vent.
- Whistle: Alerts the user if a valve is clogged and requires cleaning.
Platinum Infused Nonstick Inner Cooking Pan
The inner cooking pan features a nonstick coating infused with platinum particles. Platinum alkalizes the water, which helps break down proteins on the rice grain surface, allowing for easier water absorption. This enhanced gelatinization contributes to sweeter, better-tasting rice.
Multi-Menu Cooking Functions
The NP-NVC18 offers a variety of cooking settings to optimize different rice types and preparations:
- White Rice: Options for regular, softer, or harder textures.
- Umami Setting: Extends the soaking and steaming times to release sugars from the rice, resulting in a sweeter flavor.
- Mixed Rice: Extends preheating for better seasoning absorption and cooks at a slightly lower temperature to prevent boil-overs.
- Sushi Rice: Uses less water for a firmer texture, suitable for sushi preparation.
- Porridge: Cooks at a lower temperature for an extended period to achieve a soft, fluffy texture.
- Brown Rice: Extends preheating time for thorough water absorption and cooks at a lower temperature to ensure even cooking without becoming mushy.
- GABA Brown Rice: Activates brown rice by soaking it at 104°F (40°C) for two hours before cooking. This process increases the natural gamma-aminobutyric acid (GABA) content, which is associated with health benefits.
- Steam-Reduce Setting: Reduces steam output by 50% compared to the regular setting. This setting can be used with rinse-free rice but is separate from other cooking courses.
- Scorched Setting: Lightly toasts the bottom layer of rice for a crispy texture. This is a standalone setting.
- Rinse-Free Setting: Designed for rinse-free rice.
- Quick Cooking: For faster rice preparation.
Keep Warm Functions
- Automatic Keep Warm: Maintains cooked rice at an optimal temperature for up to 24 hours after cooking completion.
- Extended Keep Warm: Operates at a slightly lower temperature than Automatic Keep Warm to minimize drying and yellowing of rice, ideal for longer holding periods.
- Reheat Function: Takes approximately 5-8 minutes to raise the temperature of kept-warm rice to a freshly cooked state.
Keep Warm Monitor
A lid sensor detects how many times the lid has been opened and for how long, calculating the remaining rice volume. The rice cooker then adjusts the heat to maintain the ideal keep warm temperature. The monitor will beep four times at 10, 40, or 70 minutes after cooking if the lid has not been opened, prompting the user to fluff the rice to release excess moisture. It will also beep if the lid is left open for over 5 minutes, repeating every 3 minutes for up to three times. These alerts are silenced if the unit is set to 'Silent' mode.
Maintenance
Cleaning the Inner Lid and Pan
The stainless-steel inner lid is detachable and washable. Remove it after each use and clean with warm water and mild dish soap. The platinum-infused nonstick inner cooking pan should also be cleaned with a non-abrasive sponge and mild detergent. Do not use abrasive cleaners or metal scouring pads, as these can damage the nonstick coating. The inner cooking pan is not dishwasher safe.
Cleaning the Exterior and Seals
Wipe the clear-coated stainless steel exterior with a damp cloth. Regular cleaning of the seals and vents on both the inner and outer lids is recommended to prevent residue buildup and maintain optimal performance and hygiene. While some gaskets are not removable, careful cleaning with a soft brush or damp cloth can reach tight areas.

Troubleshooting
- Whistling Noise: A whistling sound indicates that the Pressure Control Valve or Safety Valve may be clogged. Immediately clean the affected valve according to the maintenance instructions.
- Unpleasant Odor: If an odor develops, it is often due to food residue in hard-to-reach areas of the lid, seals, or vents. Perform a thorough cleaning of all detachable and non-detachable components, paying close attention to gaskets and crevices.
- Lid Open Alert: If the lid is left open for more than 5 minutes, the unit will beep to remind you to close it. Close the lid to resume normal operation or silence the alert.
- Rice Texture Issues: If rice is too hard or too soft, verify that the correct menu setting was selected and that the water level corresponds accurately to the rice type and quantity. Refer to the measuring cup guidelines for precise water ratios.
