Setup

Operating Instructions
The Chef'sChoice Hybrid Knife Sharpener features three stages for comprehensive knife sharpening. Stages 1 and 2 are electric, while Stage 3 is manual.
General Sharpening Tips:
- Always clean knives before sharpening.
- Apply only light downward pressure when sharpening.
- Pull the knife through the slot at a consistent speed.
- For best results, alternate between the left and right slots of each stage.
Sharpening Straight-Edge Knives:
- Stage 1 (Electric - Coarse Sharpening):
This stage is for dull or damaged knives. Turn the power switch ON. Insert the knife blade into the left slot of Stage 1, close to the bolster. Pull the knife towards you, maintaining light downward pressure. Repeat this process in the right slot of Stage 1. Perform 5-10 pairs of pulls (left and right slot) for very dull knives, fewer for moderately dull knives. You will hear a slight grinding sound as the diamond abrasives work.
- Stage 2 (Electric - Fine Sharpening):
After Stage 1, move to Stage 2. This stage refines the edge. With the power switch ON, insert the knife blade into the left slot of Stage 2. Pull the knife towards you. Repeat in the right slot. Perform 2-3 pairs of pulls. The sound will be smoother than in Stage 1.
- Stage 3 (Manual - Honing/Polishing):
This final stage creates a polished, razor-sharp, arch-shaped edge. The power switch can be OFF for this stage. Insert the knife blade into the left slot of Stage 3. Pull the knife towards you. Repeat in the right slot. Perform 5-10 pairs of pulls, or until the desired sharpness is achieved. This stage also sharpens serrated edges.

Sharpening Serrated Knives:
Serrated knives should only be sharpened in Stage 3 (manual honing/polishing). The power switch can be OFF.
- Insert the serrated blade into the left slot of Stage 3.
- Pull the knife towards you, applying light pressure. Repeat in the right slot.
- Perform 10-15 pairs of pulls, or until the serrations feel sharp. This stage will sharpen the "points" of the serrations.
Maintenance and Cleaning
Regular maintenance ensures optimal performance and longevity of your sharpener.
- Cleaning the Exterior: Wipe the exterior of the sharpener with a damp cloth. Do not use abrasive cleaners or immerse the unit in water.
- Cleaning Sharpening Dust: Over time, metal dust from sharpening will accumulate in the collection trays beneath the sharpening slots. To clean, unplug the unit. Invert the sharpener over a waste receptacle and gently tap it to dislodge the metal filings. You can also use a soft brush to clean the slots.
