Operating Instructions
Water Bath Canning Method
The water bath canning method is suitable for high-acid foods such as fruits, jams, jellies, pickles, and tomatoes with added acid. Ensure your jars are clean and sterilized according to standard canning guidelines.
- Place the canning rack in the bottom of the pot.
- Fill the pot with enough water to cover the jars by at least 1 inch (2.5 cm) once they are placed inside. For 7 quart jars, approximately 11 quarts of water are needed.
- Heat the water to a simmer (180°F / 82°C) for raw-packed foods or to a boil (212°F / 100°C) for hot-packed foods.
- Carefully place filled and sealed jars onto the canning rack using a jar lifter, ensuring they do not touch each other or the sides of the pot.
- Ensure the water level covers the jars by at least 1 inch. Add more hot water if necessary.
- Place the tempered glass lid on the canner, ensuring the vent holes are positioned away from you.
- Bring the water to a rolling boil. Once boiling, begin timing your processing according to your recipe's specific requirements and altitude adjustments.
- Maintain a steady, gentle boil throughout the processing time.
- After processing, turn off the heat and let the canner sit for 5 minutes before carefully removing the lid.
- Using a jar lifter, carefully remove the hot jars and place them on a towel or cooling rack, spaced at least 2 inches apart, to cool completely for 12-24 hours.

Steam Canning Method
Steam canning is an alternative method for high-acid foods, using less water than traditional water bath canning. This method is efficient and effective.
- Flip the canning rack so that the jars sit higher, allowing steam to circulate underneath.
- Add 2-3 inches (5-7.5 cm) of water to the bottom of the canner.
- Place filled and sealed jars onto the elevated canning rack, ensuring they do not touch each other or the sides of the pot.
- Place the tempered glass lid on the canner, ensuring the vent holes are positioned away from you.
- Bring the water to a rolling boil to generate steam. Once a steady column of steam is visible from the vent holes, begin timing your processing according to your recipe's specific requirements and altitude adjustments.
- Maintain a steady steam throughout the processing time.
- After processing, turn off the heat and let the canner sit for 5 minutes before carefully removing the lid.
- Using a jar lifter, carefully remove the hot jars and place them on a towel or cooling rack, spaced at least 2 inches apart, to cool completely for 12-24 hours.

Temperature Indicator Usage
The built-in temperature indicator on the lid's knob helps you monitor the internal temperature and altitude zone for accurate processing times. This eliminates guesswork and ensures safe canning.
- Before first use, or annually, calibrate the temperature indicator according to the instructions provided in the separate manual or accompanying documentation. This ensures accuracy based on your altitude.
- During canning, observe the needle on the indicator. It will move as the temperature inside the canner rises.
- Once the needle reaches the appropriate zone for your altitude (as indicated on the gauge), begin timing your canning process according to your recipe.
- Maintain the temperature within the recommended zone throughout the entire processing time.
