Setup

Before initial operation, ensure the following steps are completed:

  3. Electrical Connection: A qualified electrician must connect the oven to the appropriate electrical supply. Refer to the specifications section for voltage requirements. Note: Specify voltage when placing order.
  4. Initial Burn-Off: Before first use, operate the oven empty at 350°F (177°C) for approximately 30 minutes to burn off any manufacturing oils. Ensure the area is well-ventilated during this process.

Controls Overview:

Basic Operation:

  1. Preheating: Turn the power switch ON. Set the desired temperature using the temperature control knob. Allow the oven to preheat until the indicator light turns off, signaling the set temperature has been reached.
  2. Loading Product: Open the dual pane thermal glass windows in the stainless steel door frames. Carefully place baking pans on the chrome-plated racks. The oven accepts 13 in x 18 in half size baking pans front to back. There are 5 racks for 9 positions with a minimum of 1 5/8 in spacing per cooking section.
  3. Setting Cook Time: Set the desired cooking time using the solid state timer.
  4. Fan Speed: Select the appropriate fan speed (high or low) based on the product being cooked.
  5. Monitoring: Monitor cooking progress through the glass doors. Avoid opening the doors frequently to maintain oven temperature.
  6. Completion: When cooking is complete, the timer will signal. Carefully remove the cooked product.
  7. Shut Down: Turn the power switch OFF when not in use.
