2. Safety Instructions

4. Setup

4.1 Unpacking and Placement

Carefully remove the machine from its packaging. Inspect for any shipping damage. Place the machine on a sturdy, level countertop capable of supporting its weight (approximately 125 lbs net). Ensure the dimensions (21"D x 29"W x 21"H) are accommodated with sufficient space for ventilation and access.

4.2 Electrical Connection

Connect the machine to a dedicated 220-240V, 19 Amp electrical circuit. A qualified electrician should perform the installation if a suitable outlet is not available. The machine has an electrical heating system with a manual reset safety thermostat.

4.3 Water Supply Connection

Connect the machine to a potable water supply using appropriate plumbing. The machine features an electric internal pump and an electronic automatic water level control system. Ensure the water pressure is within the recommended range for commercial espresso machines. A water filter is recommended to protect the machine from scale buildup.

4.4 Initial Boiler Filling

After connecting the water supply, power on the machine. The electronic automatic water level system will initiate the filling of the 14-liter boiler. Monitor the water level sight glass to confirm proper filling. The machine will automatically stop filling once the optimal level is reached.

5. Operating Instructions

5.1 Powering On and Heating

Turn on the main power switch. The machine will begin to heat the boiler to the operating temperature. Monitor the boiler pressure gauge. Allow approximately 20-30 minutes for the machine to reach full operating temperature and pressure before use.

5.2 Espresso Preparation

  1. Grind Coffee: Use freshly ground espresso coffee. The machine is designed for ground coffee input.
  2. Dose and Tamp: Fill the portafilter basket with the desired amount of ground coffee and tamp evenly.
  3. Insert Portafilter: Securely insert the portafilter into one of the brewing groups.
  4. Select Volumetric Shot: Press the desired volumetric button on the control panel. The machine will automatically dispense the pre-programmed amount of espresso.
  5. Remove Portafilter: Once brewing is complete, remove the portafilter and discard the spent coffee grounds.

5.3 Steaming Milk

  1. Prepare Milk: Fill a stainless steel pitcher with cold milk.
  2. Purge Steam Wand: Briefly open the steam valve on one of the flexible steam jets to purge any condensed water. Close the valve.
  3. Steam Milk: Immerse the tip of the steam wand just below the surface of the milk. Open the steam valve fully. Create a vortex to incorporate air for frothing, then lower the wand to heat the milk.
  4. Clean Steam Wand: Immediately after steaming, wipe the steam wand with a damp cloth and briefly purge steam again to clear any milk residue.

5.4 Hot Water Dispensing

To dispense hot water, position a cup under the flexible hot water tap and open the hot water valve. Close the valve once the desired amount of hot water is dispensed.

6. Maintenance

Regular maintenance is crucial for the longevity and performance of your espresso machine. Always ensure the machine is turned off and cooled before performing maintenance.

6.1 Daily Cleaning

  • Portafilters and Baskets: Remove and clean portafilters and filter baskets after each use.
  • Group Heads: Use a group head brush to clean coffee grounds from the shower screens and group gaskets.
  • Steam Wands: Wipe and purge steam wands immediately after each use to prevent milk buildup.
