Important Safety Instructions
When using electrical appliances, basic safety precautions should always be followed to reduce the risk of fire, electric shock, and/or injury to persons, including the following:

- This appliance cooks under pressure. Improper use may result in scalding injury. Make certain unit is properly closed before operating.
- Never force open the pressure cooker. Make sure pressure is completely released before opening.
- Do not fill the unit over 2/3 full. When cooking foods that expand during cooking, such as rice or dried vegetables, do not fill the unit over 1/2 full.
- Always check the pressure release valve for clogging before use.

Setup
- Unpack: Carefully remove all components from the packaging. Retain packaging for storage or future shipping.
- Clean: Before first use, wash the removable cooking pot and trivet in warm, soapy water. Rinse thoroughly and dry. Wipe the exterior of the main unit with a damp cloth. Do not immerse the main unit in water.
- Assemble: Place the removable cooking pot inside the main unit. Ensure it is seated correctly.
- Lid Placement: Place the lid onto the unit, aligning the arrow on the lid with the unlock symbol on the base. Rotate the lid clockwise until it locks into place, aligning the arrow on the lid with the lock symbol.
- Power Connection: Plug the power cord into a standard electrical outlet. The digital display will illuminate.
Operating Instructions
The Cuisinart EPC-1200PC offers multiple cooking functions. Always ensure the lid is properly locked for pressure cooking functions.
General Operation
- Add ingredients to the cooking pot. Ensure liquid is added for pressure cooking.
- Secure the lid as described in the Setup section.
- Press the Menu button to cycle through available cooking functions (Pressure Cook, Browning, Simmer, Sauté, Keep Warm).
- For Pressure Cook, select either Low Pressure or High Pressure.
- Use the Time button to adjust the cooking duration.
- Press Start/Cancel to begin the cooking cycle.
- To cancel a program at any time, press Start/Cancel.
Pressure Cooking
Pressure cooking significantly reduces cooking times by up to 70%.
- Add food and liquid to the cooking pot. Do not exceed the MAX fill line (2/3 full for most foods, 1/2 full for expanding foods like rice).
- Close and lock the lid. Ensure the pressure release valve is in the sealed position.
- Select Pressure Cook and choose Low or High Pressure.
- Set the desired cooking time using the Time button.
- Press Start/Cancel. The unit will preheat and build pressure. Once pressure is reached, the timer will begin counting down.
- When cooking is complete, the unit will beep and automatically switch to the Keep Warm function.
- Releasing Pressure:
- Natural Release: Allow the pressure to dissipate naturally. This is recommended for foamy foods or large cuts of meat. The lid will unlock when pressure is fully released.
- Quick Release: Carefully turn the pressure release valve to the "venting" position. Steam will rapidly escape. Keep hands and face clear of the steam. Once all pressure is released, the lid will unlock.
- Once pressure is released, twist the lid counter-clockwise to unlock and lift it away from you to avoid steam.
Browning, Simmering, Sautéing
These functions operate without pressure and are ideal for preparing ingredients before pressure cooking or for general cooking.
- Add ingredients to the cooking pot. The lid can be left off or loosely placed on top.
- Select the desired function (Browning, Simmer, or Sauté) using the Menu button.
- Adjust time if necessary.
- Press Start/Cancel to begin.
Keep Warm
The unit automatically switches to Keep Warm after most cooking cycles. It can also be selected manually.
- To manually activate, press Menu until Keep Warm is selected.
- Press Start/Cancel.
Maintenance and Cleaning
Regular cleaning ensures optimal performance and longevity of your pressure cooker.
- Always unplug the unit from the electrical outlet and allow it to cool completely before cleaning.
- Removable Cooking Pot and Trivet: These are dishwasher safe. Alternatively, wash them in warm, soapy water, rinse, and dry thoroughly.
- Lid: Wash the lid by hand in warm, soapy water. Pay attention to the gasket and pressure release valve area. Ensure no food particles are lodged in the valve. Rinse thoroughly and dry. The gasket should be inspected regularly for cracks or damage and replaced if necessary.
- Main Unit: Wipe the exterior with a damp cloth. Do not use abrasive cleaners or scouring pads. Never immerse the main unit in water or any other liquid.
- Storage: Store the pressure cooker in a dry place. You may place the lid upside down on the cooking pot to prevent odors and allow air circulation.
