Setup

Operating Instructions

Sharpening Straight-Edge Knives

    • Pull the knife slowly and steadily towards you, from the heel to the tip, maintaining constant contact with the angle guide. Apply moderate downward pressure.
    • Repeat this process 3-5 times for each side of the blade (alternating between the left and right slots of Stage 1). Listen for a consistent grinding sound.
  3. Stage 2 (Manual Honing):
    • Insert the knife blade into the manual honing slot (Stage 2).
    • Pull the knife slowly and steadily towards you, from the heel to the tip, maintaining light downward pressure.
    • Repeat this process 5-10 times for each side of the blade (alternating between the left and right slots of Stage 2).
  4. Check Sharpness: Carefully test the knife's sharpness. If not sufficiently sharp, repeat Stage 2.

Sharpening Serrated Knives

Serrated knives should only be sharpened in Stage 2 (manual honing) to maintain their unique edge profile.

  1. Power Off: Ensure the sharpener is turned off.
  2. Stage 2 (Manual Honing):
    • Insert the serrated knife blade into the manual honing slot (Stage 2).
    • Pull the knife slowly and steadily towards you, from the heel to the tip, applying light downward pressure.
    • Repeat this process 10-15 times, focusing on the serrations.
  3. Clean Blade: Wipe the blade with a damp cloth to remove any metal particles.

Maintenance
