Setup

  1. Unpack: Carefully remove the sharpener from its packaging. Retain packaging for future storage or transport.

Operating Instructions

The Chef'sChoice Model 316 features a two-stage sharpening system designed for 15-degree knife edges. Stage 1 hones the edge, and Stage 2 polishes it.

Sharpening Process

  1. Power On: Turn the power switch to the 'ON' position. The sharpener is now ready for use.
  2. Stage 1 - Sharpening/Honing:
    • Insert the heel of the knife blade into the left slot of Stage 1, ensuring the blade is flat against the guide.
    • Pull the knife slowly and steadily towards you, allowing the diamond abrasives to work. Maintain light, consistent downward pressure.
    • Repeat this process for the right slot of Stage 1. Alternate between the left and right slots, making an equal number of passes (typically 3-5 passes per side for a moderately dull knife).
    • A small burr should form along the edge of the blade. This indicates effective sharpening.
  3. Stage 2 - Polishing/Stropping:
    • Move to Stage 2. Insert the heel of the knife blade into the left slot of Stage 2.
    • Pull the knife slowly and steadily towards you, applying very light downward pressure.
    • Repeat for the right slot of Stage 2. Alternate between the left and right slots, making an equal number of passes (typically 1-2 passes per side).
    • This stage refines the edge, removing the burr and creating a polished, razor-sharp finish.
  4. Check Sharpness: Test the knife's sharpness on a piece of paper or a tomato. If not sufficiently sharp, repeat Stage 2. For very dull knives, you may need to repeat Stage 1 and then Stage 2.
  5. Power Off: Once sharpening is complete, turn the power switch to the 'OFF' position and unplug the unit.

Maintenance

Cleaning

  • Always unplug the sharpener before cleaning.
  • Wipe the exterior of the sharpener with a damp cloth. Do not use abrasive cleaners or immerse the unit in water.

Stage 2 Dress Tool
