Setup

Before first use, ensure all packaging materials are removed. The Atlas 150 is designed for stability and ease of use on most kitchen countertops.

  1. Secure the Machine: Place the pasta maker on a clean, flat countertop. Use the included clamp to firmly secure the machine to the edge of the counter. Tighten the clamp screw until the machine is stable and does not wobble during operation.
  2. Attach the Hand Crank: Insert the hand crank into the designated opening on the side of the machine. Ensure it is fully seated for smooth rotation.
  3. Initial Cleaning: Before processing dough, run a small piece of scrap dough or a clean, dry cloth through the rollers and cutters several times to remove any manufacturing residues. Discard this initial material.

Operation

Follow these steps to create fresh pasta sheets and cuts:

  1. Prepare Your Dough: Ensure your pasta dough is well-kneaded and rested. It should be firm but pliable, not sticky. Lightly dust your work surface and dough with flour to prevent sticking.
  2. Roll Pasta Sheets:
    • Set the thickness adjustment knob to the widest setting (typically '0' or '1').
    • Flatten a portion of dough by hand or with a rolling pin so it fits into the rollers.
    • Feed the dough through the smooth rollers while turning the hand crank.
    • Fold the rolled dough in half or thirds, lightly flour, and pass it through the rollers again. Repeat this process 5-6 times until the dough is smooth and elastic.
    • Gradually adjust the thickness knob to a thinner setting, passing the dough through each setting once or twice until you reach your desired pasta sheet thickness (e.g., '6' for fettuccine, '8' for lasagna).

  3. Cut Pasta:
    • Once your pasta sheet is at the desired thickness, carefully feed it through the appropriate cutting rollers (fettuccine or tagliolini).
    • Turn the hand crank steadily to cut the pasta into uniform strands.
    • Catch the cut pasta as it emerges and place it on a lightly floured surface or a pasta drying rack to prevent sticking.

Maintenance

Proper care ensures the longevity and performance of your Marcato Atlas 150.

  • Cleaning: The machine is NOT dishwasher safe. Clean the pasta maker immediately after use. Use a dry brush or a wooden stick to remove any dough residue from the rollers and cutters. For stubborn bits, a soft cloth can be used. Avoid using water or abrasive cleaners, as this can damage the chrome finish and internal mechanisms.
  • Storage: Store the pasta maker in a dry place, away from direct sunlight and humidity. Keep the hand crank and clamp with the machine to prevent loss.
  • Lubrication: The machine does not require lubrication. Its self-lubricating gears are designed for maintenance-free operation.

Troubleshooting

  • Dough Sticking to Rollers:
    • Ensure your dough is not too wet. Add a small amount of flour to the dough and re-knead until it is firm and smooth.
    • Lightly dust the dough sheet and rollers with flour before each pass.
  • Uneven Pasta Sheets:
    • Start with a well-kneaded, uniform piece of dough.
    • Fold the dough and pass it through the widest setting several times until it is perfectly smooth and rectangular before gradually decreasing the thickness.
  • Pasta Not Cutting Cleanly:
    • The pasta sheet might be too sticky or too dry. Adjust dough consistency by lightly flouring or re-kneading with a tiny bit of water if too dry.
    • Ensure the cutting rollers are clean and free of dried dough.
