Operating Instructions
Preparing the Yogurt Mixture
- Heat Milk: Pour 4-6 cups of fresh milk (dairy or non-dairy) into a saucepan. Heat the milk slowly to 180°F (82°C). Use the included thermometer to monitor the temperature. Heating the milk helps to denature proteins, resulting in a thicker yogurt.
- Cool Milk: Remove the milk from heat and allow it to cool to 108-112°F (42-44°C). This temperature range is ideal for the starter culture to thrive. Cooling can be expedited by placing the saucepan in an ice bath.
- Add Starter Culture: Once the milk has cooled to the correct temperature, add 2-3 tablespoons of plain yogurt with live active cultures (from a previous batch or store-bought) or a commercial yogurt starter powder. Stir gently until fully incorporated. Avoid over-stirring.
- Fill Jars: Carefully pour the yogurt mixture into the 8 individual BPA-free jars. Do not overfill.
Incubation Process
- Place Jars: Arrange the filled jars (without their lids) into the heated base of the yogurt maker.
- Cover: Place the clear unit cover over the jars and onto the base.
- Power On: Plug the yogurt maker into a standard electrical outlet. The LCD display will illuminate.
- Set Timer: Use the digital timer controls to set the desired incubation time. Typical incubation times range from 6 to 12 hours, depending on desired thickness and tartness. Longer times result in thicker, tangier yogurt.
- Incubation: The unit will maintain a consistent temperature for the set duration. The LCD display will show the remaining time. The unit features 5- and 10-minute warning beeps before automatic shut-off.
- Cooling: Once the incubation cycle is complete and the unit has automatically shut off, remove the jars from the yogurt maker. Place the lids on the jars and refrigerate for at least 4 hours before serving. This stops the culturing process and allows the yogurt to thicken further.
Maintenance and Cleaning
- Always unplug the yogurt maker from the power outlet before cleaning.
- Allow the unit to cool completely before cleaning.
- The yogurt jars and lids are dishwasher safe (top rack recommended) or can be washed by hand with warm, soapy water.
- Wipe the exterior of the main unit and the clear cover with a damp cloth. Do not use abrasive cleaners or scouring pads.
- Never immerse the main unit (heated base) in water or any other liquid.
- Ensure all parts are completely dry before storing or next use.
Troubleshooting
- Yogurt is too runny:
- Ensure milk was heated to 180°F (82°C) and cooled to 108-112°F (42-44°C).
- Verify the starter culture is fresh and active.
- Increase incubation time.
- Consider adding 1/3 cup of dry milk powder per quart of milk for a thicker consistency.
- Yogurt is too sour:
- Reduce incubation time.
- Ensure milk was cooled to the correct temperature before adding starter.
- Unit does not turn on:
- Check that the power cord is securely plugged into both the unit and a working electrical outlet.
- Verify the outlet is receiving power.
