1. Important Safeguards

3. Setup

Follow these steps for the initial setup of your espresso machine:

  1. Fill with Water: Twist off the cap on top of the boiler. Carefully fill the machine with fresh, cold water using a pitcher. Fill to the indicated level on the water gauge.
  2. Secure Cap: Screw the cap back on firmly until it is secure.
  3. Power On: Plug the machine into a grounded electrical outlet. Locate the power switch (usually on the base) and turn it on.

4. Operating Instructions: Making Espresso

Achieving the perfect espresso shot requires practice and attention to detail. Your grind size is crucial; select a fine grind with no granulation.

  1. Grind Coffee: Pour fresh coffee beans into your grinder. Select a fine grind suitable for espresso.
  2. Select Basket: Choose either the 1-cup or 2-cup coffee basket depending on your desired serving size.
  3. Fill and Tamp: Fill the selected coffee basket with the freshly ground coffee. Use a coffee press (tamper) to sift and pack the grinds firmly and evenly.
  4. Lock Portafilter: Attach the portafilter (coffee handle) to the group head by turning it to the left until it is securely locked into place.
  5. Position Cups: Place your espresso cups directly underneath the spout(s) of the portafilter. For a single espresso, center the cup between both spouts.
  6. Pre-infusion: Raise the lever to its highest point and leave it up for 4-5 seconds. This allows hot water to saturate the coffee grounds, preparing them for extraction.
  7. Extract Crema: Slowly lower the lever about three-quarters of the way down. You should feel resistance as the espresso begins to extract. This initial slow press helps to extract the rich crema. Adjust the grind if the coffee exits too quickly or too slowly.
  8. Complete Extraction: Then, raise the lever to the top again and leave it up for 2-4 seconds before repeating the pull-down motion. Longer or shorter shots can be achieved by adjusting the time the lever is left up.

5. Operating Instructions: Frothing Milk

The La Pavoni Europiccola offers two frothing systems: the standard steam arm and an additional Cappuccino Automatic attachment (for plated models).

5.1 Using the Standard Steam Arm

  1. Prepare Milk: Pour cold milk into a heat-safe frothing pitcher or cup, filling it about 3/4 of the way full.
  2. Insert Wand: Insert the steam wand into the bottom of the cup.
  3. Open Steam Knob: Open the steam knob fully (3 full turns).
  4. Froth Milk: Immediately lower the cup so the tip of the wand is just beneath the milk surface. Keep the tip positioned at the top of the milk surface, lowering your cup as the froth rises.
  5. Finish: Once desired froth is achieved, close the steam knob. Remove the cup.
  6. Combine: Allow the frothed milk (cappuccino) to sit for 15-20 seconds before adding your freshly pulled espresso shot.

5.2 Using the Cappuccino Automatic Attachment

This attachment simplifies the frothing process by automatically drawing milk and dispensing frothed milk.

  1. Remove Steam Wand: Carefully remove the standard steam wand from the machine.
  2. Attach Automatic Frother: Attach the Cappuccino Automatic attachment to the steam outlet.
  3. Insert Tube: Insert the clear tube from the attachment into a container of cold milk (e.g., a milk bottle or carton).
  4. Position Cup: Place your cup underneath the spout of the Cappuccino Automatic attachment.
  5. Open Steam Knob: Open the steam knob fully (3 full turns). The machine will begin to draw milk and dispense frothed milk into your cup.
  6. Finish: Close the steam knob once the desired amount of frothed milk is dispensed. Remove the cup and place it on a flat surface.
  7. Add Espresso: Add your freshly pulled espresso shot to the frothed milk to complete your cappuccino or latte.

6. Maintenance and Cleaning

Regular cleaning ensures optimal performance and longevity of your La Pavoni machine.

  • Daily Cleaning:
    • Empty and clean the drip tray after each use.
    • Wipe down the exterior of the machine with a damp cloth.
    • Rinse the portafilter and coffee baskets thoroughly after each use.
    • Purge the steam wand after each use by briefly opening the steam knob to clear any milk residue. Wipe the wand with a damp cloth.
  • Weekly Cleaning:

    • Clean the group head gasket area.
  • Descaling:
    • Depending on water hardness and usage, descale your machine every 2-3 months.

    • Always rinse the boiler thoroughly with fresh water multiple times after descaling to remove all solution residue.

7. Troubleshooting
