Operating Instructions
The Bear SNJ-C10V3 offers four main functions: Greek Yogurt, Yogurt, Rice Wine, and Cheese. The microcomputer control panel allows for easy selection and timing.
Control Panel Overview

The control panel includes dedicated buttons for each function, a 'Time' button to adjust fermentation duration, a 'Function' button to cycle through options, and 'Confirm'/'Cancel' buttons.
Making Yogurt (Traditional or Greek)
- Prepare Ingredients: Pour 1L of pure milk into a clean glass container. Add the desired amount of yogurt starter powder. Stir thoroughly until the starter powder is fully dissolved.
- Place in Maker: Place the container (or multiple ceramic cups) into the yogurt maker. Close the main lid.
- Select Function: Plug in the power. Use the 'Function' button to select 'Yogurt' or 'Greek Yogurt'. The default fermentation time is usually 8 hours for traditional yogurt. For Greek yogurt, the process involves an additional whey separation step.
- Start Fermentation: Press 'Confirm' to start. The machine will maintain a constant temperature using NTC technology.
- Whey Separation (for Greek Yogurt): After the initial fermentation, if making Greek yogurt, transfer the yogurt to the filter cup. Place the filter cup over a glass container to collect the whey. Allow it to separate for 12-48 hours in the refrigerator until desired consistency is achieved.
- Enjoy: Once fermentation is complete and whey is separated (if applicable), your homemade yogurt is ready to enjoy.

Making Rice Wine
- Prepare Ingredients: Follow your preferred rice wine recipe, typically involving cooked glutinous rice and rice wine starter.
- Place in Maker: Place the prepared ingredients in a suitable container inside the yogurt maker.
- Select Function: Use the 'Function' button to select 'Rice Wine'. Adjust time if necessary.
- Start Fermentation: Press 'Confirm' to start.
- Enjoy: Once fermentation is complete, your homemade rice wine is ready.
Making Cheese (Nai Lao)
- Prepare Ingredients: Follow your preferred cheese recipe, typically involving milk and rennet or an acidic agent.
- Place in Maker: Place the prepared ingredients in a suitable container inside the yogurt maker.
- Select Function: Use the 'Function' button to select 'Cheese'. Adjust time if necessary.
- Start Fermentation: Press 'Confirm' to start.
- Enjoy: Once fermentation is complete, your homemade cheese is ready.
Maintenance
Cleaning
- Unplug: Always unplug the yogurt maker from the power outlet before cleaning.
- Main Unit: Wipe the exterior of the main unit with a soft, damp cloth. Do not use abrasive cleaners or immerse the unit in water.
- Removable Parts: Wash glass containers, ceramic cups, filter cup, and lids with warm soapy water. Rinse thoroughly and dry completely before storing or next use. All parts are made from healthy, BPA-free materials like high borosilicate glass and ceramic.
Storage
Ensure the yogurt maker and all its components are clean and dry before storing. Store in a cool, dry place. The negative pressure sealed lids on the glass containers help preserve freshness and allow for refrigerator storage of fermented products.

Troubleshooting
If you encounter any issues, please refer to the following common problems and solutions:
- Yogurt not setting or too thin:
- Ensure milk powder milk is cooled to below 40°C before adding lactic acid bacteria starter. Higher temperatures can kill the bacteria.
- Do not use refrigerated milk directly; allow it to reach room temperature or warm it slightly before adding starter.
- Check the expiration date of your starter culture.
- If room temperature is below 22°C, add appropriate warm water inside the machine's main body to help maintain constant fermentation temperature.
- Strange odor or excessive gas after fermentation:
- This indicates contamination of the water source or milk powder. Discard the batch and thoroughly clean all components before trying again.
- Light yellow liquid (whey) and slightly sour taste:
- This is normal, especially for Greek yogurt or longer fermentation times. Whey is rich in lactic acid, vitamin B, and other nutrients. It can be consumed separately or mixed with food.
