5. Setup
- Unpack: Carefully remove the sharpener and all accessories from the packaging.
- Placement: Place the sharpener on a clean, dry, and stable countertop or work surface. Ensure there is enough space around the unit for safe operation.
- Power Connection: Insert the power cord into the sharpener's power inlet, then plug the other end into a suitable electrical outlet. Verify that the voltage matches the product's specifications (e.g., 230V AC 50Hz or 120V AC 60Hz, depending on your model and region).
- Familiarize: Identify the three sharpening slots:
- Slot 1 (Coarse): 360# Diamond for dull or damaged blades.
- Slot 2 (Fine): 600# Diamond for general sharpening and refining the edge.
- Slot 3 (Polish): 1000# Resin for polishing and honing the blade to a razor-sharp finish.
6. Operating Instructions
Always start with the sharpener turned off. Turn on the sharpener using the power switch located on the side before inserting the knife.
Video 1: Demonstration of knife sharpening process.
General Sharpening Steps:
- Power On: Flip the power switch to the 'ON' position. The sharpener will begin operating.
- Insert Knife: Hold the knife handle firmly. Insert the heel of the blade into the appropriate sharpening slot, ensuring the blade is centered and perpendicular to the sharpener.
- Pull Through: With light, consistent downward pressure, slowly pull the knife blade through the slot from heel to tip. Maintain a steady speed. Do not saw back and forth.
- Repeat: Repeat the pulling motion 3-5 times for each side of the blade in the same slot. Alternate sides (left and right guides within the slot) to ensure an even edge.
- Progress Through Stages: Move from Coarse to Fine, then to Polish, as needed.
- Power Off: Once sharpening is complete, turn off the sharpener and unplug it.
- Clean Blade: Carefully wipe the blade with a damp cloth to remove any metal filings before use.
Detailed Stage Usage:
- Slot 1 (Coarse - 360# Diamond): Use this slot for very dull, damaged, or re-profiling knife edges. Apply moderate pressure.
- Slot 2 (Fine - 600# Diamond): Use this slot for knives that are moderately dull or to refine the edge after using the Coarse slot. Apply light pressure.
- Slot 3 (Polish - 1000# Resin): Use this slot for daily maintenance, to achieve a razor-sharp edge, or to polish the blade after using the Fine slot. Apply very light pressure.

7. Maintenance
- Cleaning: After each use, ensure the sharpener is unplugged. Carefully remove the bottom cover (as shown in Figure 2) to access the internal compartment. Use a soft brush or cloth to remove any metal filings or dust from the sharpening wheels and housing. Do not use water or abrasive cleaners.
- Storage: Store the sharpener in a dry, cool place, away from direct sunlight and moisture. Keep it out of reach of children.
- Inspection: Periodically inspect the power cord for any damage. If the cord is damaged, discontinue use and contact customer support.
8. Troubleshooting
- Sharpener does not turn on:
- Ensure the power cord is securely plugged into both the sharpener and a working electrical outlet.
- Check the power switch is in the 'ON' position.
- Verify the electrical outlet is functioning by plugging in another appliance.
- Knives are not sharpening effectively:
- Ensure you are using the correct sharpening slot for the knife's condition (start with Coarse for very dull knives).
- Apply consistent, light pressure. Too much pressure can hinder sharpening.
- Ensure you are pulling the knife slowly and steadily through the slot, from heel to tip.
- Repeat the process 3-5 times per side in each stage.
- Check if the sharpening wheels are clean and free of debris.
- Unusual noise during operation:
- Turn off and unplug the sharpener immediately.
- Inspect the sharpening slots for any foreign objects or debris.
- If the noise persists after cleaning, contact customer support.
9. User Tips
- Voltage Compatibility: The product label indicates 230V AC 50Hz. If you require a 120V sharpener with a US plug, please ensure you have purchased the correct regional variant or use an appropriate voltage converter if necessary. Always verify the voltage on your specific unit before plugging it in.
- Gentle Touch: Many users find that less pressure yields better results, especially in the finer stages. Let the sharpener do the work.
- Consistency is Key: Maintain a consistent angle and speed when pulling the knife through the slots for the best edge.
- Clean Regularly: Regularly cleaning out metal dust from the sharpener's interior will prolong its lifespan and maintain sharpening efficiency.
