Introduction to Your New Emulsifier-Mixer
Robot Coupe introduces the Blixer®, a new concept in appliances that combines the features of a cutter and a blender-mixer. The Blixer® is designed for professional needs and can prepare a variety of mixed liquid or semi-liquid, raw or cooked meals. It offers an advantage over traditional blenders by its ability to process solid foods.
This manual provides important information to help users get the most out of their Blixer® emulsifier-mixer. It is recommended to read it carefully before use.
Important Warnings
WARNING: To limit accidents such as electric shocks, personal injury, or fire, and to prevent material damage due to misuse, please read and follow these instructions carefully. Reading the operating instructions will help you understand and use the appliance correctly. Ensure that anyone else using the appliance also reads these instructions. This equipment is designed for professional use only and must not be used by children.
- Keep these instructions in a safe place.
- Never tamper with or defeat the purpose of locking and safety systems.
- Do not put non-food objects in the bowl.
- Do not leave the machine running unattended.
- Operate and store the machine in a location not subject to water drips, spray, or explosive vapors.
- If the machine malfunctions or a part is damaged, it must be repaired by a qualified technician using only genuine Robot Coupe repair parts.
- Failure to follow operating instructions or attempting to operate the machine outside its design limits can create hazardous conditions. Pay special attention to the operation controls and safety features.
- The unit is equipped with a thermal overload circuit-breaker. If the unit overheats due to overload, it will shut off automatically. Allow it to cool for a few minutes, then press the reset button located on the bottom left front of the unit.
- Operating times of 5 minutes or longer can increase processed food temperatures above 125° F (52° C).
- Maximum fill level is 2/3 full, less if the product is very dense or sticky.
Unpacking
- Carefully remove the equipment from the packaging and check for all included boxes or packets containing attachments.
- WARNING: Some tools, such as blades, are very sharp. Handle with care.
- Store manuals, tools, and spare parts in a safe place accessible to users.
Installation
- Install the machine on a clean, sturdy counter or table.
- Keep the area around and under the machine clear to allow air circulation; otherwise, the motor can overheat.
- Ensure all four feet are in place.
Connection
- Always check that your power supply corresponds to the identification plate on the motor unit and can withstand the required amperage.
- Connect the unit to a grounded outlet with a Ground Fault Circuit Interrupter (GFCI) protection device.
- Always check that the motor shaft rotates counter-clockwise before installing the blades.
Handling
- Always take care when handling the blades, as they are extremely sharp.
- Wear cut-proof gloves when handling the blades.
Switching on the Machine
- Advice on Electrical Connections: Before plugging in, ensure your power supply matches the machine's serial number plate.
- Control Panel: Red knob = "Off" switch; Green knob = "On" switch; Black knob = "Pulse" control.
- Models: Blixer® 2, Blixer® 3, Blixer® 4 have 1 speed (3,450 rpm). Blixer® 4 V. has variable speed (300 to 3,600 rpm).
Assembly
- With the motor base facing you, place the bowl onto the motor base with the handle toward the front. Turn the bowl slightly off-center and to the left as you lower it onto the base.
- Turn the bowl back to the right (counter-clockwise), locking it onto the motor base tabs.
- Place the blade assembly onto the motor shaft. Rotate the blade assembly until it drops into place. The bottom blade should be level with and just off the bottom of the bowl.
- Position the scraper arm handle, lining it up with the arrow. Hold the scraper arm in place with one hand. With the other hand, press down on the scraper arm handle to compress the two lid wipers, and turn in a clockwise direction.
- Locate the downward-facing tab on the bowl lid. Place the lid on the bowl with the tab over the bowl handle, then lock the bowl clamps over the lid.
Operation
The unit should be off except when processing is underway. It is recommended that the machine be operated on a 50% duty cycle. Preparation time (cleaning, coring, peeling, and loading) usually takes longer than processing time, extending the machine's life.
When running frozen products in the bowl attachment, the product size should not exceed 1 inch (2.5 cm).
The Blixer® enables efficient cutting. Keep a close eye on the mixture to achieve desired results.
Hospital Uses
- Spoon Feeding: Minced foods (meat, fish), vegetable purees, mousses, compotes of stewed fruit.
- Semi-Liquid Feeding: Diluted spoon-feeding preparations like minced meat with gravy, purees with liquid, soups, and creamed soups.
- Liquid Feeding: Soups and preparations that can be liquidized for tube feeding.
Restaurants and Delicatessen:
- Butter mixtures (snail butter, salmon butter, anchovie butter).
- Sauces (green sauce, mayonnaise, remoulade, aïoli), emulsified sauces.
- Grinding for bisque (lobster, scampi, seashells).
- Grinding herbs, seeds, powders.
- Mixing: homogenization of creams, mixed components, varied ingredients.
Cleaning
WARNING: Always unplug the appliance before cleaning (risk of electrocution).
- Motor Unit: Never immerse the motor unit in water. Clean with a damp cloth or sponge. Cleaning of the motor base assembly requires care. Use a cloth lightly soaked in mild detergent, ensuring water does not penetrate the shaft seal or switches. Clean the motor shaft. Rinse with a damp cloth, then with a sanitizing solution, and dry with a soft cloth.
- WARNING: NEVER USE PURE BLEACH. Always dilute detergent as per manufacturer's instructions.
- Clean per the following instructions or as required by local health department regulations.
- Blade: The blade cap may need removal for cleaning. Wear cut-resistant gloves. Use a screwdriver or similar tool to knock the cap out from the bottom.
- Wiper Assembly: Position the scraper arm handle with the arrow. Hold the scraper arm. Press down on the scraper arm handle to compress the lid wipers and turn counter-clockwise.
- The bowl, blade, cap, lid, and wiper assembly are dishwasher safe. They can be washed in a commercial dishwasher or a three-tank system pot sink. Pre-rinse attachments to remove bulk food. A stiff bristle brush or power sprayer can aid in cleaning crevices. Ensure the washer has an industry-standard wash, rinse, and sanitization cycle. Allow parts to air-dry after sanitizing before reassembly.
- NOTE: High temperatures in dishwashers can shorten the life of plastic and rubber parts. Hand washing in a three-pot sink will provide the longest life for these parts. Wear cut-resistant gloves when cleaning the blade.
Maintenance
- WARNING: Always unplug the appliance before servicing.
- Check seals regularly and ensure safety devices are in good working order.
- Maintain and check attachments, as some products contain corrosive agents (e.g., citric acid).
- NOTICE: Never operate the appliance if the power cord or plug is damaged.
- If the machine malfunctions, remove it from use and have it serviced. Discard any food processed at the time of malfunction.
- Contact your local Authorized Service Agency if any issues arise.
- Blade: Blade sharpness affects cut quality. Blades are wearing parts and should be replaced occasionally to ensure consistent product quality.
- Motor Seal: Periodically examine the seal around the motor shaft to ensure it maintains liquid integrity. With proper care, the seal should last a year or more. It is recommended to replace the seal every three to six months, or when wear is noted, by an authorized repair agency.
- Bowl Locking Washer: This washer, located below the bowl, holds it in place. Replace if worn.
- Wiper Assembly: This assembly includes three rubber wipers that need replacement when worn. Replacements are available.

Working Height
It is recommended to position the Blixer® on a stable worktop so that the upper edge of the cutter bowl is at a height of between 47 and 51 inches.
Noise Level
The equivalent continuous sound level when the Blixer® is operating with no load is less than 70 dB(A).
Safety
- WARNING: The blades are extremely sharp. Handle with care.
- The Blixer® 2, Blixer® 3, Blixer® 4, and Blixer® 4 V. are fitted with a safety device and motor braking system. When the lid is opened, the motor stops. To restart, close the lid and press the green button.
- Allow the blades to come to a complete stop before opening the lid to prevent liquids from splashing.
- The Blixer® 2, Blixer® 3, and Blixer® 4 are equipped with a thermal protector insert in the motor winding that automatically stops the motor if overloaded. If this occurs, allow the machine to cool completely before restarting. The thermal protector will reset automatically.
- The Blixer® machines are equipped with a manually resettable overload circuit-breaker. If the machine is overloaded, the breaker will trip. If this occurs, allow the machine to cool completely, then reset the breaker located on the motor base.

Procedure to Set Minimum and Maximum Speed (Blixer 4 V Series A)
DANGER: Risk of electric shock. This procedure must be performed by a qualified electrician.
- Place the Cutter bowl (without blade) on the motor base. Close the lid. Lay the apparatus on its right side.
- Connect a voltmeter (DC voltage measure) in parallel with the motor to A+ and A- on the variator (VAR). Apply power and run the motor by pushing the On knob.
- Minimum speed setting: Rotate the apparatus knob to full OFF (counter-clockwise). On the variator (VAR), adjust MIN POT to read 8.5 volts (±0.2 volts).
- Maximum speed setting: Rotate the apparatus knob to full ON (clockwise). On the variator (VAR), adjust MAX POT to read 90 volts (±0.2 volts). If 90 volts cannot be achieved with MAX POT, adjust ACCEL POT to read 90 volts.
Caution: If ACCEL POT is adjusted, repeat the full minimum and maximum speed setting procedure.
Note: Failure to follow this procedure will void your warranty.
