SAFETY INSTRUCTIONS
When using electrical appliances, basic safety precautions should always be taken, including the following:
· Read all instructions before using the Ultra Yogurt Maker.
· Do not use this appliance for any other purpose than its intended use.
· The appliance is not intended to be used or cleaned by children or persons with reduced physical, sensory, or mental capabilities or lack of experience and knowledge of the hazards involved.
· When turned on, the Ultra Yogurt Maker should always be on a stable countertop or table.
· The appliance should always be turned "OFF" before plugging or unplugging from the outlet. Never yank the cord to disconnect from the outlet, instead gently pull the plug to disconnect.
· Unplug from the power outlet when not in use and before cleaning.
· Do not place on or near a hot gas or electric burner, or in a heated oven.
· The use of attachments not recommended or sold by us may cause fire, electric shock, or injury.
· Do not operate the appliance if it has a damaged cord or plug, if the appliance malfunctions, if dropped or is damaged in any manner.
· To avoid the risk of injury, do not let the cord hang over the edge of the table or counter or touch hot surfaces.
· To protect against the risk of electrical shock, do not immerse this yogurt maker in water or other liquid.
· Do not use outdoors.
· For household use only.
· Keep this yogurt maker in a dry and cool place.

HOW TO USE
BEFORE FIRST USE
1. Remove any labels or stickers from the appliance. 2. Before the first use or after periods of prolonged storage, wash the cover, glass jars, and jar lids by following the instructions from the CLEANING section of this manual. 3. Wipe the surface and the inside of the Fermenting pot with a damp cloth, then wipe dry.

INGREDIENTS
Milk
· The following types of milk may be used: Pasteurized milk of any fat content (full, 2%, 1%, or fat-free) Powdered milk Long-life UHT sterilized milk Soy Milk. Be sure to use UHT soy milk which contains one of the following ingredients: fructose, honey, or malt. These ingredients are necessary for fermentation, as otherwise, yoghurt will not be produced.
· If you are using raw milk or milk which has been in your refrigerator for several days, the best results will come from milk that has been boiled for a few minutes and then cooled to the lukewarm temperature (95 °F). Heating the milk for too long or at too high a temperature will produce a poor-quality yogurt.
· The taste and texture of yogurt vary according to the milk and yogurt starter selected.
· See TIPS FOR BEST RESULTS section of this manual for further details.
Yogurt Starter
The plain yogurt can either be purchased from a store or from a previous batch of homemade yogurt. If you use the homemade yogurt, please repeat only one time. Yogurt starter can be used instead of yogurt. Follow the directions on the Yogurt Starter package.
When using commercial yogurt as a starter, buy only brands that contain bacterial culture, and check the expiration dateculture becomes weaker over time. Use only plain yogurtflavored varieties will not work.
For best results do not use: · Expired milk, · Expired yogurt, or · Yogurt with flavoring, fruit, or other ingredients.

INSTRUCTIONS FOR USE
1. To fill out all 8 jars, place 46 oz (1.37 L) of fresh, pasteurized milk (it can be either whole milk, skimmed or semi-skimmed) in a clean bowl. Pour out some of that milk in a separate bowl and mix it with 2.4 oz (70 ml) of refrigerated yogurt. Stir until the yogurt is dissolved and you have a smooth mixture.
2. Add the prepared mixture gradually to the remaining milk and stir gently until combined.
NOTE: It is not necessary to make 8 jars of yogurt. You can make 2 or 3. This will not harm your machine. The ratio between the milk and yogurt should be 95% milk-5% yogurt.
Note: The capacity of 1 jar is 6oz (180ml).
3. Pour the mixture into the 8 jars of the yogurt maker, and close the jars with jar lids.
4. Place the jars in the yogurt maker.
5. Cover the yogurt maker with its Upper cover.
6. Plug the yogurt maker into the wall outlet.
7. Push the Power ON/OFF button to turn on the unit; the Power indicator light will turn blue.

8. It will take 8-12 hours for the yogurt to be made depending on the type of milk (approximately 8 hours for whole milk; approximately 12 hours for skimmed milk), the room temperature, and your personal preferences. Longer fermenting time produces yogurt with thicker consistency and higher acidity. Shorter fermenting time produces yogurt with thinner consistency and lower acidity.
NOTE: It takes around 6-8 hours for the machine to reach its maximum temperature of approx. 112°F / 45°C.
IMPORTANT: DO NOT MOVE THE YOGURT MAKER DURING THE FERMENTING PROCESS. It is also not recommended to remove the upper cover from the yogurt maker or the lid of the glass jars, but if you do decide to open it to check the progress of your yogurt, be aware that this will slightly affect the fermentation of the yogurt.
9. After 8-12 hours, push the Power ON/OFF button to turn off the unit and remove the plug from the wall outlet.
10. Place the jars in the refrigerator for a minimum of 3 hours before eating.
CAUTION: The refrigeration time for the yogurt should not be more than 7 days. It is recommended that you consume the yogurt within 3 days since the activation of lactobacillus in yogurt is the highest during this period.
TIPS FOR BEST RESULTS
· The taste and texture of yogurt vary according to the milk and yogurt starter selected. Yogurt can be made with the milk of any fat content, even non-fat milk. You should experiment with the milk of various fat contents to determine which you prefer. · Yogurt made with skim milk or skim milk powder will have a soft consistency. For thicker, creamier yogurt, add 1/2 cup milk powder to the milk before heating. · If you are using raw milk or milk which has been in your refrigerator for several days, the best results will come from milk that has been boiled for a few minutes and then cooled to the lukewarm temperature (95 °F). Heating the milk for too long or at too high a temperature will produce a poor quality yogurt.

· If yogurt is left in the machine for too long, the curd and liquid whey will separate. Once this occurs, you cannot reverse the process. · After refrigerating, should a watery substance form on the top of your yogurt, simply mix it in, or pour it off into your sink. This is a regular occurrence with homemade and commercial yogurts. · You may choose to make flavored yogurt and add sugar, honey, flavorings, fruit, or other ingredients. It is best to flavor yogurt after being in a refrigerator for several hours or right before eating. If you add flavoring before refrigerating or add too much flavoring, your yogurt will become very watery. Here are some flavoring suggestions: 2 teaspoons of frozen juice concentrate-apple, orange, pineapple, etc.; 1 tablespoon of dietetic jam, preserves, or jelly; 1 tablespoon of juice nectar-pear, apricot peach, etc.; 1 teaspoon of your favorite gelatin or pudding/pie dessert (powder form); 1 teaspoon of molasses or maple syrup; 1 tablespoon of applesauce with a dash of cinnamon with some raisins; 1 tablespoon of your favorite liqueur; 1 tablespoon of sweetened coconut; 1 teaspoon of cocoa, chocolate or carob syrup; add some nuts or sesame seeds for an extra crunch; 1 tablespoon of any natural cereal; add some fresh fruit for an extra treat; 1 teaspoon of instant coffee; 1 tablespoon of honey with a teaspoon of vanilla.
CLEANING
· Always unplug the appliance from the power outlet and let it cool down before cleaning. · We recommend that you clean the appliance after each use. · Clean the Base and the Upper cover with a damp cloth only. DO NOT IMMERSE THE BASE NOR THE COVER IN WATER OR OTHER LIQUID. · Wash the jars and their lids with warm soapy water. Lids are not dishwasher safe. You can wash the jars in a dishwasher, top-rack only, keeping the temperature below 150°F / 65°C. · Do not use corrosive or abrasive cleaning products to clean the parts. · Do not immerse the cord, plug, or appliance in water or other liquids.
