This guide provides instructions for using the Stone-Baked Pizza feature on your Frigidaire Gallery oven.
Using Stone-Baked Pizza
Your oven is equipped with the following accessories for Stone-Baked Pizza:
- A. Pizza Stone
- B. Pizza Shield
- C. Pizza Peel

Before Using Stone-Baked Pizza:
- Wipe the Pizza Shield, Stone, and Peel with a soft, dry cloth to remove debris. Do not use water on the pizza shield.
- To hear timing alerts, navigate to Menu options

> General Settings > Volume Level. - Place Pizza Shield (B) with Pizza Stone (A) on the oven rack at position 7. Check the rack position number on the left side of the oven's front frame.
Prepping & Assembling:
- Select "Stone-Baked Pizza" on the control panel and follow instructions. The oven will preheat for approximately 30 minutes.
- While preheating, prepare your pizzas. Stretch fresh, room-temperature dough on a flat, floured surface (cutting board or countertop).
- Do not stretch or roll dough on the peel.
- Sprinkle 1/2 tbsp of cornmeal on the peel before placing the dough, ensuring it stays within the 14" circular marks.
- Place dough on the cornmeal-dusted peel and add sauce, cheese, and toppings. Ensure all proteins are pre-cooked.
- Before placing the pizza in the oven, gently shake the peel to ensure the pizza isn't sticking. Add more cornmeal if needed.
Transferring Pizza Into Oven:
- Once preheated, the oven will display "Insert Pizza".
- Tilt the peel, touch the tip to the hot stone, and push forward. Use the pizza shield as a backstop to slide the pizza off.
- Do not move the pizza once it touches the hot stone; let it cook undisturbed.
- After placing the pizza, select "Confirm" to begin the 2-minute countdown.
Cooking Your Pizza:
- An alert will sound 30 seconds before the pizza is ready. Ensure oven volume is on.
- After 2 minutes, the pizza is cooked. Check its appearance. If desired, add 15 seconds by selecting "+15S".
- Use the peel to remove the pizza and select "Done". Use the backstop to help slide the pizza onto the peel.
- To make another pizza, select "Continue". The oven will perform a short reheat cycle and signal "Pizza Ready".
After Cooking:
- Wait at least one hour before removing the Pizza Shield and Stone. Use protective gloves or oven mitts.
- Sweep off ashes with a brush and discard.
- Store the stone and shield in the storage drawer: place the stone first, then the shield upside down on top of the stone.
- Do not store the peel in the storage drawer.
Important Information
- Stone-Baked Pizza Mode is designed for fresh dough only.
- Do not cook frozen pizzas, partially baked premade pizzas, or premade crusts in this mode, as it may not cook properly and could damage the stone.
- Do not clean the pizza stone between pizzas while it is hot.
- Do not leave the peel on the Pizza Stone while cooking.
- Wipe excess cornmeal off the peel before inserting the pizza to keep the oven cleaner and reduce smoking.
- Excess cornmeal/flour can cause smoking or small flames. If flames appear, keep the oven door closed; they will extinguish themselves.
- Remove the Pizza Shield and Stone before using other cooking modes, as they can affect oven performance.
Caring for Your Pizza Stone:
- Do not season the pizza stone with oil.
- Do not use chemicals to clean the stone, as it can absorb them and release them when heated.
- Do not wash the stone in the dishwasher.
- Discoloration of the stone and shield over time will not impact pizza quality.
Pro Tips for Making Pizzas
- Store-bought fresh pizza dough (approx. 16 oz) is usually enough for two pizzas.
- Let refrigerated dough sit at room temperature for at least 1 hour before baking. Follow package instructions for frozen dough.
- To shape by hand, press from the center outward, avoiding the edges, for a lighter, puffier crust.
- If dough shrinks back, let it rest for 5-10 minutes.
- If dough tears, pinch it back together or let it rest.
- A pizza roller creates a uniform shape but may result in a less puffy crust.
- Too many toppings or too much sauce can make the crust soggy and difficult to cook evenly.
- Add fresh ingredients like basil and arugula after cooking for best flavor.
- Use fresh, high-moisture mozzarella for better results than shredded mozzarella.

- How do I cook a frozen pizza if I can't use Stone-Baked pizza mode? Bake on the middle rack using No Preheat, Bake, or Convection Bake cooking modes.

- CONVECT BAKE: Uses a fan for quick and even baking.

Your Oven Controls:
Press the keys on the oven control. Temperature and modes appear on the display.
- Press the ON/OFF button or touch the screen to start.
- Select "Start" for a 350°F bake cycle, or choose a different Oven Mode or temperature.
- If selecting an Oven Mode, scroll down to see all options.
- The default temperature for the selected mode will appear. Use the keypad to change if needed.
- Touch "Start". To cancel anytime, touch "Cancel".
