Notes on Accessories
- Agitators are installed by raising onto the mixing axle and rotating clockwise until locked. Removal involves raising the agitator, clearing the lock, and rotating counter-clockwise.
- Accessories are fitted to the bowl with rounded corners for easy removal and cleaning.
Unpacking the Equipment and Initial Setup
Carefully remove all packaging materials. If shipped on a pallet, remove bolts. Place the mixer on a flat surface with adequate space for cleaning and service. Use only grounded electrical outlets matching the nameplate voltage. Do not use extension cords or power strips.
Installation
- Read the entire manual before installation and operation.
- Select a suitable location considering:
- Level surface
- Accessibility for maintenance and service
- Adequate clearance for agitator, bowl, and attachment installation/removal
- Sufficient space for adding ingredients
- Unobstructed rear ventilation outlet
Operation Instructions
Ensure power supply matches machine specifications (e.g., NEMA 5015P, 110V).
Speed Changing: Stop the machine before changing speed to prevent gear box damage. Ensure the bowl is fully lifted and the guard is closed.
- Slow Speed: Dough hook setting, knob facing forward.
- Medium Speed: Flat beater setting, knob straight down.
- High Speed: Whisk setting, knob straight up.
Mixing Attachments
Always use the correct attachment for the job.
- Wire Whip: For liquids and soft ingredients. Works at all speeds. Maximum run time: 15 minutes.
- Flat Beater: For dry ingredients. Use at low & medium speeds only. Do not use at high speed. Maximum run time: 15 minutes.
- Dough Hook: For mixing dough. Use at low & medium speeds only. Do not use at high speed. Maximum run time: 20 minutes. Requires an absorption ratio (water weight / flour weight) of more than 50%.

Note on Absorption Ratio (AR): For doughs, check AR (water weight divided by flour weight). Capacities are based on 12% flour moisture at 70°F. Reduce batch size by 10% if using high gluten flour.
Example AR Calculation: 5 lb. water / 10 lb. flour = 0.50 = 50% AR.
- 2nd Speed should not be used for mixtures with less than 50% AR.
- Do not use attachments on the hub while mixing.
Helpful Weights & Measures:
- 8.3 lb. = 1 gallon of water
- 2.08 lb. = 1 Quart

Maintenance and Protection
Cleaning
WARNING: DISCONNECT THE MACHINE FROM THE POWER SOURCE BEFORE CLEANING.
All mixer bowls and accessories (whips, beaters, dough hooks) should be washed before first use. Wash with hot water and mild soap, rinse with mild vinegar or soda solution, then rinse again with clean water. This is recommended before whipping egg whites or whole eggs. Clean the mixer daily with a damp cloth.
If the unit has been stored for a period, follow the cleaning procedure before use. Grease the rear bowl lift guides every three months to prevent corrosion.
Troubleshooting
