Location Requirements
- Appliances are intended for indoor use only.
- Ensure the floor can support the total weight (up to 1,500 pounds when fully loaded). Reinforce the floor if necessary.
- Provide good air circulation inside and out for efficient refrigeration.
Inside Cabinet:
Do not pack units so full that air cannot circulate. Refrigerated air is discharged at the top rear. Ensure proper airflow from top rear to bottom to prevent evaporator coil freeze-up and water overflow. Shelves have rear turn-up rails; avoid blocking airflow with items placed too far back. Fans are mounted to the front of the evaporator coil.
Outside Cabinet:
Ensure ample air access. Avoid hot corners and locations near stoves/ovens. Install the unit no closer than 2" (51mm) from any wall, with at least 12" (305mm) clear space above. A maximum door swing clearance of 60.5" (1537mm) is required. Adequate airflow (below 86°F / 30°C) into the utility compartment is needed for proper performance and longevity.
Installation Clearance
Single Door Models: Requires 2" (51mm) clearance from walls, 60.5" (1537mm) for maximum door swing, and 27" (686mm) depth.
Double Door Models: Requires 12" (305mm) clear space above, 60.5" (1537mm) for maximum door swing, and 27" (686mm) depth.
Leveling
Ensure the floor is level. A slight slope downwards from front to rear (up to 1/4") is acceptable, but it must not slope from rear to front.
Stabilizing
All models are supplied with casters. Lock the front wheels while in use for stability. If the unit must be laid on its side or back, allow at least 24 hours before start-up for compressor oil to flow back. Failure to do so can cause compressor failure and damage not covered by warranty.
NOTICE: Unit repairs due to improper installation or unqualified installers may not be covered by standard warranties.
Electrical Connection
Refer to the Technical Information table, serial tag, local code, or National Electrical Code for proper power source connection. DANGER: The unit must be turned OFF and disconnected from the power source for service, maintenance, or cleaning to prevent death or severe injury.
Operation
Refrigerator Cycle
Evaporator fans run when doors are closed and stop when one or more doors are open. The door switch activates interior lights. The unit defrosts every 6 hours by stopping the compressor for 20 minutes. Anti-condensation heaters on door frames assist the compressor. Recommended holding temperature: 36° to 41°F (2° to 5°C). Factory set to 36°F (2°C).
Freezer Cycle
Evaporator fans run when doors are closed and stop when one or more doors are open. Fans cycle off during defrost. The door switch activates interior lights. The unit defrosts every 4 hours using an electric heater. When coil temperature reaches 54°F (12°C) or after 35 minutes of defrost (plus 5 minutes delay), the unit restarts. Anti-condensation heaters assist the compressor. Recommended holding temperature: -9° to 9°F (-23° to -13°C). Factory set to -6°F (-21°C).
Power Switch
The power switch is located on the front of the bottom panel. It glows green when the unit is on.
Thermostat Descriptions

Tips for Proper Operation, Cleaning and Maintenance
- Clean daily and test holding temperature by comparing content temperature to controller display (should be within 3°F).
- Use a soft cloth or microfiber towel for exterior cleaning. Avoid stiff brushes, scouring pads, or scrapers that can damage the finish.
- Use mild detergent or warm soapy water for interior/exterior cleaning. For tougher jobs, use a 3M Scotch Brite pad with Dawn and water or a stainless steel cleaner.
- Ensure gaskets make a good compression seal and are not torn to maintain efficiency and prevent temperature issues. Use gasket adhesive when replacing gaskets.
- Do not pack the unit too full; allow for proper airflow from top rear to bottom.
- Minimize door openings to maintain proper temperature.
- Use shelving with rear and side turn-up rails to ensure proper air circulation.
- Never use an infrared thermometer for bulk temperature monitoring; use a NIST-capable instrument and calibrate it at least 3 times a year using an ice bath.
- For best performance, ambient conditions should be less than 80°F with relative humidity below 65%.
- Ensure the automatic defrost cycle keeps the evaporator fan coil free of ice for proper airflow and temperature maintenance. Refrigerator set point: 35° to 40°F.
- Periodically inspect displayed temperature and measure steady state product temperature with a calibrated thermometer; readings should be within 4°F of each other and below recommended holding temperatures.
- Clean cooling fins using a commercial vacuum or degreaser at least 3 times a year to prevent clogging. Do not use wire or stiff bristle brushes.
- Test and clean the drain line or condensate evaporator at least twice a year to ensure proper condensate evacuation.
- Digital controllers have a differential setting for cut-in/cut-out points; a 3° or 4°F differential is recommended for tight temperature regulation.
- Only load the unit with pre-cooled product.
- Avoid jerking doors open immediately after closing to prevent gasket damage and maintain holding temperatures.
Cleaning and Maintenance
DANGER: The unit must be turned off and disconnected from the power source for service, maintenance, or cleaning to prevent death or severe personnel injury.
NOTE: Regular maintenance preserves performance, product quality, and appliance life.
Exterior and Interior Cleaning of Appliances
Clean with soap and warm water, or ammonia/degreasing detergent. For exterior stainless steel, clean with the grain to avoid marring. Do not use abrasive cleaners that can scratch surfaces or damage gaskets.
Cleaning the Condenser Coil
Clean the condenser coil every 90 days, or every 30 days in dusty/greasy environments. Use a brush for light dust, or a vacuum/compressed air for heavier buildup. Use de-greasing agents for heavy grease. Failure to clean the coil can lead to high temperatures, excessive run times, and compressor failures, voiding warranties. Clean at least quarterly. Use a commercial condenser coil cleaner and soft brush, or vacuum with a shop vac or CO2.
CAUTION: Never use a high-pressure washer, as it can damage electrical components.
Condenser fins must be kept clear of dust, dirt, and grease. Clean at least every three to four months, or more frequently if needed. Use a vacuum cleaner or stiff brush; a commercial-grade cleaner may be required for extremely dirty conditions.
Stainless Steel Care and Cleaning
Stainless steel contains iron and chromium. The chromium forms a passive film that protects against corrosion. If this film is broken or contaminated, rust or discoloration can occur. Use CitriSurf 2310 to restore the protective layer. Clean stainless steel surfaces every 6 weeks with a cleaner/polish like Weiman or 3M products. Address "hard water" issues immediately by wiping dry. CAUTION: Use soft cloths or plastic scouring pads, not steel pads, wire brushes, or scrapers. Use alkaline-based or non-chloride cleaners. Cleaners with chlorides can damage the protective film. Rinse and dry thoroughly if chlorides are used. Routine cleaning with soap and water is sufficient. For extreme stains, use a non-abrasive cleaner and plastic scrub pad, always cleaning with the grain. Early signs of breakdown (pits, cracks) require thorough cleaning and application of stainless steel cleaners. CAUTION: Never use an acid-based cleaning solution, as acidic food products can damage the finish.
Gasket Maintenance
Clean gaskets regularly with warm soapy water to prevent mold and mildew and maintain elasticity. Do not use full-strength cleaners or sharp tools. Gaskets are "Dart" style and can be replaced by pulling them out of the groove and pressing new ones in. Worn gaskets are not covered by warranty.
Doors/Hinges
If a door sags, tighten the hinge bracket screws. Loose or sagging doors can pull hinges out of the frame, potentially damaging doors and hinges. Reinforcement may be needed for loose hinge sets.
