Sharpening Very Dull or Damaged Knives (Coarse, Medium, Fine)

1. Coarse Slot (WC-Co Alloy): Insert the knife blade into the Coarse slot (usually marked 'Coarse' or with a rougher texture). Pull the knife through the slot from heel to tip, applying light downward pressure. Repeat 3-5 times, or until the blade feels noticeably sharper.
2. Medium Slot (Diamond Powder): Move to the Medium slot. Pull the knife through 3-5 times, using light pressure. This stage refines the edge and restores initial sharpness.
3. Fine Slot (Aluminum Ceramic): Finish by pulling the knife through the Fine slot 3-5 times. This hones the blade to a razor-sharp edge and removes any burrs.

Regular Maintenance and Honing (Medium, Fine)

1. Medium Slot (Diamond Powder): For knives that have lost some sharpness but are not severely dull, start with the Medium slot. Pull the knife through 3-5 times.
2. Fine Slot (Aluminum Ceramic): Follow with the Fine slot, pulling the knife through 3-5 times to achieve a polished, sharp edge.

After sharpening, always wipe the knife blade clean with a damp cloth to remove any metal particles before use.
