The charcoal side allows for rich, smoky flavor and can be used for traditional grilling or smoking.
- Open the charcoal grill lid and remove the cooking grates.
- Place charcoal briquettes or lump charcoal onto the adjustable charcoal tray.
- Ignite the charcoal using a charcoal chimney starter or appropriate fire starters. Never use lighter fluid in a gas/charcoal combo grill.
- Once the charcoal is ash-covered, spread it evenly or arrange for indirect cooking.
- Replace the cooking grates and close the lid to preheat.
- Control temperature using the adjustable charcoal tray (raising for higher heat, lowering for lower heat) and the dual dampers for airflow.

6. Maintenance and Cleaning
Regular cleaning and maintenance will extend the life of your grill and ensure optimal performance.
- After Each Use: Allow the grill to cool. Scrape cooking grates with a grill brush. For the charcoal side, use the EasyDump™ ash pan for convenient ash disposal.
- Griddle Care: After each use, scrape off food residue. While warm, wipe with a paper towel. For stubborn residue, use hot water and a griddle scraper. Re-season the griddle periodically by applying a thin layer of cooking oil and heating it until it smokes.
- Exterior Cleaning: Wipe exterior surfaces with a damp cloth and mild detergent. Avoid abrasive cleaners.
- Gas Burners: Periodically check burner ports for blockages. Clean with a wire brush if necessary.
- Storage: Store the grill in a dry, covered area when not in use. If storing outdoors, use a grill cover to protect it from the elements.

7. Troubleshooting
Refer to this section for common issues and their solutions.
| Problem | Possible Cause | Solution |
|---|---|---|
| Gas burner won't light | No gas flow, clogged burner, faulty igniter | Check propane tank, ensure gas valve is open, clean burner ports, check igniter electrode. |
| Uneven heating (gas) | Clogged burner ports, low gas pressure | Clean burner ports, check propane tank level. |
| Charcoal grill too hot/cold | Improper airflow, charcoal quantity | Adjust dampers for airflow, adjust charcoal tray height, add or remove charcoal. |
| Smoke leaking from lid | Lid not sealed properly | Ensure lid is fully closed. Gaps may occur over time; consider high-temperature gasket material if persistent. |
