Setup
Before First Use
- Unpack all parts and remove any packaging materials.
- Wash the Lid, Egg Racks, Poaching Tray, Omelet Tray, Expansion Ring, and Measuring Cup in warm, soapy water. Rinse thoroughly and dry. These parts are also dishwasher safe.
- Wipe the Base with a damp cloth. Do not immerse the Base in water.
- Ensure the appliance is placed on a stable, heat-resistant surface.
Operating Instructions
General Operation
- Ensure the appliance is unplugged before adding water or eggs.
- Use the provided measuring cup to add the appropriate amount of water to the heating plate in the Base. The measuring cup has markings for different egg consistencies (soft, medium, hard) and number of eggs.
- Always pierce the large end of each egg with the piercing pin located at the bottom of the measuring cup. This helps prevent cracking during cooking and facilitates easier peeling.
- Place the desired tray (egg rack, poaching tray, or omelet tray) onto the Base.
- Cover with the Lid. If using two egg racks, place the Expansion Ring between the racks before covering with the Lid.
- Plug the appliance into a standard electrical outlet.
- Press the power switch to begin cooking. The indicator light will illuminate.
- The appliance will automatically shut off when the water has evaporated, and the indicator light will turn off.
- Carefully remove the Lid, using oven mitts as steam will be hot.
- Remove cooked items. For boiled eggs, immediately rinse under cold water to stop the cooking process and aid in peeling.
Boiling Eggs (Soft, Medium, Hard)
Use the egg racks for boiling eggs. The measuring cup indicates water levels for soft, medium, and hard-boiled eggs, based on the number of eggs being cooked (7 or 14).

- For 14 eggs, use both egg racks and the expansion ring.
- Follow the general operating instructions.
Poaching Eggs
- Lightly grease the poaching tray with cooking spray or butter.
- Break one egg into each section of the poaching tray.
- Add water to the heating plate according to the measuring cup's "poached" marking.
- Place the poaching tray onto the Base and cover with the Lid.
- Follow the general operating instructions. Cooking time is typically 6-8 minutes for poached eggs.
Making Omelets
- Lightly grease the omelet tray with cooking spray or butter.
- Whisk 1-2 eggs with a pinch of salt and pepper, and any desired fillings (e.g., finely chopped vegetables, cheese).
- Pour the egg mixture into the omelet tray.
- Add water to the heating plate according to the measuring cup's "omelet" marking.
- Place the omelet tray onto the Base and cover with the Lid.

- Place desired food items into the omelet or poaching tray, or directly onto an egg rack if suitable.
- Add water to the heating plate. The amount of water will depend on the food and desired steaming time. Start with the "hard-boiled" water level and adjust as needed.
- Cover with the Lid and turn on.
- Monitor the food for desired doneness. The appliance will shut off when water evaporates.
Cooking Guide and Doneness
The Elite Gourmet EGC1215M offers consistent results for various egg consistencies. The cooking time is determined by the amount of water added, which controls the steaming duration.

Maintenance and Cleaning
Regular cleaning ensures optimal performance and extends the life of your egg cooker.
- Always unplug the appliance and allow it to cool completely before cleaning.
- Dishwasher Safe Parts: The Lid, Egg Racks, Poaching Tray, Omelet Tray, Expansion Ring, and Measuring Cup are all dishwasher safe (top rack recommended) or can be washed by hand with warm, soapy water.
- Base: Wipe the exterior of the Base with a damp cloth. Do not immerse the Base in water or any other liquid.
- Heating Plate: Mineral deposits may accumulate on the stainless-steel heating plate over time. To remove, add 1/4 cup of white vinegar to the heating plate and let it sit for 5-10 minutes. Gently scrub with a non-abrasive sponge or brush, then wipe clean with a damp cloth. Rinse thoroughly.
- Ensure all parts are completely dry before storing.
Troubleshooting
If you encounter issues with your egg cooker, refer to the following common problems and solutions:
| Problem | Possible Cause | Solution |
|---|---|---|
| Eggs are not cooked to desired doneness. | Incorrect water amount. | Ensure the correct water level is used according to the measuring cup markings for your desired doneness. Adjust water slightly for personal preference. |
| Eggs crack during cooking. | Eggs not pierced; cold eggs placed directly into hot steam. | Always pierce the large end of each egg with the piercing pin before cooking. Allow very cold eggs to sit at room temperature for a few minutes before cooking. |
| Eggs are difficult to peel. | Eggs not cooled quickly after cooking; very fresh eggs. | Immediately rinse cooked eggs under cold water or place them in an ice bath to stop the cooking process. Fresher eggs are generally harder to peel; older eggs peel more easily. Ensure eggs were pierced. |
| Appliance does not turn on. | Not plugged in; power switch not pressed. | Check that the power cord is securely plugged into a working outlet. Press the power switch firmly. |
| White residue on heating plate. | Mineral deposits from water. | Clean the heating plate with white vinegar as described in the "Maintenance and Cleaning" section. |
