EAST OAK Ridgewood Pro 30" Electric Smoker User Manual
Model: PR30BK | Brand: EAST OAK
Introduction
The EAST OAK Ridgewood Pro 30" Electric Smoker is designed to provide a consistent and flavorful smoking experience. Unlike traditional grills, this electric smoker utilizes indirect heat to cook and infuse food with rich smoky flavors at lower temperatures. This method ensures tender meat with a desirable texture.
This manual provides essential information for the safe and effective operation, maintenance, and troubleshooting of your electric smoker. Please read it thoroughly before first use.

Setup and First Use
Assembly
The EAST OAK Ridgewood Pro 30" Electric Smoker is designed for straightforward assembly. All parts and hardware are clearly labeled to facilitate the process. While assembly may take some time, the components are engineered to fit together precisely.

Initial Cleaning and Seasoning (Before First Use)
Before using your smoker for the first time, it is crucial to clean the device thoroughly to remove any residues from the manufacturing process, such as oil and dust. This process also helps to season the smoker, preparing it for optimal performance.
- Clean the interior with a wet sponge and mild detergent, then allow it to air-dry completely.
- Use a clean cloth with a small amount of cooking oil to wipe the interior walls. Avoid applying oil to the smoke box, heating elements, grease tray, or water tray.
- Ensure the water and smoke boxes are empty, and the vent is open.
- Power up the smoker, set the temperature to 275°F (135°C), and allow it to run for 2 hours.
- After 2 hours, turn off the smoker and allow it to cool down completely.
- Your smoker is now ready for use.
Note: During this initial heating process, it is normal to observe some oil smoke and odors due to the burning off of manufacturing residues. This will largely dissipate after the high-temperature operation. Protective gloves are recommended during use.
Operating Instructions
General Operation
The EAST OAK Ridgewood Pro Electric Smoker is designed for ease of use with digital controls. Simply set your desired time and temperature, and the smoker will maintain consistent conditions for optimal results.

Figure 4: Digital Control Panel. The control panel allows for easy adjustment of temperature (up to 275°F) and setting the timer (up to 12 hours). It also displays the meat probe temperature.
Smoking Process and Temperature Recommendations
For effective low-temperature smoking, it is recommended to first set the smoker to 250-275°F (121-135°C). This allows the smoker to generate ample smoke before placing food inside. Once sufficient smoke is produced, you can adjust the temperature to your desired cooking level. If the initial temperature is set lower than 250°F, the smoker may not produce consistent smoke.
The built-in meat probe tracks the internal temperature of your food in real-time, ensuring precise cooking. The smoker can automatically stop cooking and switch to a keep-warm mode once the target temperature is reached, preventing overcooking.

Figure 5: Smoker Interior with Food. The spacious interior accommodates various foods on multiple racks, allowing for large batches.
Wood Chip Loading
The smoker features an adjustable side chip loader, allowing you to add wood chips at any time without opening the main door. This minimizes heat loss and ensures a continuous, consistent smoke throughout your cooking session.

Figure 6: Side Chip Loader. This feature enables convenient wood chip replenishment, ensuring uninterrupted smoking and rich flavor.
The design allows for up to 6 times longer smoke duration per load compared to some other models, reducing the need for frequent refills.
Capacity and Ergonomics
With 725 square inches of cooking area, the smoker can accommodate large quantities of food, such as full racks of ribs, multiple whole birds, or various cuts simultaneously. The elevated stand raises the smoker to a comfortable height, reducing the need to bend or squat when checking food or adjusting settings.

Figure 7: Large Cooking Capacity. The smoker's generous interior space allows for cooking multiple items at once, ideal for family gatherings.

Figure 8: Elevated Stand for Comfort. The integrated stand provides an ergonomic height, making it easier to load, unload, and monitor your food.
Care and Maintenance
Regular cleaning and maintenance will ensure the longevity and optimal performance of your EAST OAK Ridgewood Pro Electric Smoker.
Cleaning After Use
- Allow the smoker to cool completely before cleaning.
- Remove cooking racks, drip pan, and water bowl. These components can be cleaned with warm soapy water or, if suitable, in a dishwasher.
- Wipe down the interior walls of the smoker with a wet sponge and mild detergent. Ensure all food residues and grease are removed.
- Air-dry all components thoroughly before reassembling or storing the smoker.
- Periodically inspect the screws and painted surfaces. Some users have noted that screws may lose their paint and rust over time; applying a rust inhibitor and repainting after assembly can help mitigate this.
Troubleshooting
| Problem | Possible Cause | Solution |
|---|---|---|
| Smoker not producing consistent smoke. | Initial temperature set too low (below 250°F). | Set the smoker to 250-275°F (121-135°C) initially to generate ample smoke, then adjust to desired cooking temperature. |
| Oil smoke and odors during first use. | Residues from manufacturing process. | This is normal. It should largely dissipate after the initial high-temperature seasoning process (running for 4 hours). |
| Door latch has sharp edges. | Manufacturing design. | Exercise caution when handling the door latch. Consider wearing protective gloves. Contact customer support for further assistance if concerned. |
