4. Setup and Assembly

The GGM Gastro MMSS Mini Smoker requires minimal assembly. Follow these steps to set up your smoker:

  1. Unpack Components: Carefully remove all parts from the packaging.
  2. Attach Wheels: Securely attach the four wheels to the base of the smoker's legs using the provided hardware. Ensure they are firmly tightened for stability.
  3. Install Smoke Outlet: Insert the smoke outlet (chimney) into the designated opening on the main cooking chamber. Ensure it is seated properly.
  4. Place Grate: Position the stainless steel grate inside the main cooking chamber.

5. Operating Instructions

5.1 Fueling the Smoker

5.2 Temperature Control

  • The smoker is designed to operate at temperatures up to 70°C (158°F). This low temperature is ideal for cold smoking or maintaining warmth.
  • Temperature is primarily controlled by the amount of fuel added to the firebox and the adjustment of the air vents on the firebox door and the smoke outlet.
  • To increase temperature, add more fuel and open the vents slightly to allow more airflow.
  • To decrease temperature, reduce fuel and close the vents slightly to restrict airflow.
  • Monitor the internal temperature using a reliable thermometer (not included, but recommended for precise cooking).

5.3 Smoking Food

  • Once the desired temperature and smoke production are achieved, place your food on the stainless steel grate in the main cooking chamber.
