4. Setup

1. Unpack: Carefully remove all components from the packaging.
2. Initial Cleaning: Before first use, wash the portafilter head, filter basket, and handle (if detachable) with warm soapy water. Rinse thoroughly and dry completely.
3. Assemble: If the handle is detached, screw it firmly onto the portafilter head. Insert the provided filter basket into the portafilter head.
4. Inspect: Ensure all parts are securely assembled and free from any debris.

5. Operating Instructions

Using a bottomless portafilter requires attention to grind size, dosing, and tamping for optimal results. It provides visual feedback on your espresso extraction.

1. Prepare Coffee Grounds: Grind fresh coffee beans to an appropriate fineness for espresso. The ideal grind size will result in a steady, even flow from the portafilter.
2. Dose the Basket: Fill the 18-22g filter basket with your desired amount of ground coffee. Ensure the dose is consistent for even extraction.
3. Distribute and Tamp: Distribute the coffee grounds evenly within the basket. Use a tamper to apply firm, level pressure to compact the grounds. A consistent tamp is crucial for preventing channeling.
4. Attach to Machine: Securely insert the portafilter into your Bezzera espresso machine's group head. Ensure it is locked into place.
5. Begin Extraction: Initiate the brewing process. Observe the coffee flow from the bottomless portafilter. An ideal extraction will show a steady, conical flow, often referred to as a 'mouse tail'.
6. Monitor and Adjust: If you observe channeling (streams of coffee squirting unevenly) or an overly fast/slow extraction, adjust your grind size, dose, or tamping technique accordingly.

6. Maintenance and Cleaning

Regular cleaning and maintenance will ensure the longevity and optimal performance of your CAPFEI Bottomless Portafilter.

• After Each Use: Immediately after brewing, remove the portafilter from the machine. Knock out the spent coffee puck. Rinse the portafilter head and filter basket under hot water to remove any residual coffee grounds and oils.
• Daily Cleaning: For a more thorough daily clean, detach the handle if necessary and wash all components with warm water and a mild dish soap. Use a brush to clean the filter basket holes.
• Drying: Ensure all parts are completely dry before reassembling or storing to prevent water spots and mineral buildup.
• Deep Cleaning (Weekly/Bi-weekly): Periodically soak the portafilter head and filter basket in a solution of espresso machine cleaner (e.g., Cafiza) according to the cleaner's instructions. This will remove stubborn coffee oils and residue. Rinse thoroughly after soaking.

7. Troubleshooting

• Channeling (Coffee squirting unevenly):
  • Cause: Uneven distribution of coffee grounds, inconsistent tamping, or grind size too fine.
  • Solution: Ensure coffee grounds are evenly distributed in the basket before tamping. Apply consistent, level pressure when tamping. Try a slightly coarser grind.
• Extraction too fast (Weak, watery espresso):
  • Cause: Grind size too coarse, insufficient dose, or weak tamp.
  • Solution: Adjust grind to be finer. Increase coffee dose if necessary. Apply firmer tamp pressure.
• Extraction too slow (Bitter, over-extracted espresso, or no flow):
  • Cause: Grind size too fine, overdose, or excessive tamp pressure.
  • Solution: Adjust grind to be coarser. Reduce coffee dose. Apply lighter tamp pressure.
• Portafilter difficult to lock into group head:
  • Cause: Gasket in group head is worn or dirty, or portafilter is new and stiff.
  • Solution: Clean the group head gasket. If new, it may require a few uses to loosen up. If persistent, inspect or replace the group head gasket.
