3. Setup
- Prepare Your Workspace: Place the magnetic angle base on a stable, flat, and non-slip surface.
- Select Sharpening Angle: The magnetic base offers two angles:
- 15°: Ideal for precise knives, often found in Japanese-style blades, requiring a very fine edge.
- 20°: Suitable for most standard kitchen knives, providing a durable and sharp edge.
- Prepare the Knife: Ensure your knife blade is clean and free from any food debris or oil.
- Attach Grinding Disc: The rolling sharpener unit comes with interchangeable discs. For initial sharpening of very dull knives, ensure the #400 diamond grinding disc is attached. For regular maintenance or refining, use the #1000 ceramic honing disc. The discs are magnetic and easily attach to the ends of the rolling unit.
4. Operating Instructions
Follow these steps to sharpen your knife:
- Secure the Knife: Place the knife blade flat against the chosen magnetic angle on the base. The strong magnets will hold the blade securely in place, ensuring a consistent sharpening angle throughout the process.
- Initial Sharpening (Coarse Grit - #400 Diamond Disc):
- With the #400 diamond grinding disc attached to the rolling sharpener, place the rolling unit on the knife blade, ensuring it makes contact with the edge.
- Apply light, even pressure and roll the sharpener along the entire length of the blade, from the heel to the tip.
- Repeat this motion several times (e.g., 10-15 passes) on one side of the blade.
- Flip the knife over and repeat the same number of passes on the other side.
- Fine Honing (Fine Grit - #1000 Ceramic Disc):
- Replace the #400 diamond disc with the #1000 ceramic honing disc on the rolling sharpener.
- Repeat the rolling motion along the entire length of the blade, applying slightly lighter pressure than with the coarse grit.
- Perform several passes (e.g., 5-10 passes) on each side of the blade. This step refines the edge and removes any burrs created during initial sharpening.
- Clean the Blade: Carefully wipe the sharpened blade with a clean, damp cloth to remove any metal particles or residue.
- Test Sharpness: Test the sharpness of your knife on a piece of paper or a tomato. It should slice smoothly without tearing.

5. Maintenance
- Cleaning: After each use, wipe the grinding discs and the magnetic angle base with a dry or slightly damp cloth to remove any metal filings. Do not immerse the wooden base in water.
- Disc Replacement: The grinding discs are designed to be easily removable and replaceable. If you notice reduced sharpening effectiveness, it may be time to replace the discs. Simply detach the magnetic disc from the rolling unit and attach a new one.
- Storage: Store the sharpener unit and magnetic base in a dry, safe place away from moisture and extreme temperatures.
6. Troubleshooting
- Knife not sharp enough:
- Ensure you are using the correct angle for your knife type.
- Increase the number of passes with both the coarse (#400) and fine (#1000) grit discs.
- Verify that the grinding discs are not excessively worn. Replace if necessary.
- Blade slipping during sharpening:
- Ensure the magnetic base is placed on a stable, non-slip surface.
- Confirm the knife blade is clean and dry before placing it on the magnetic base.
- Apply firm but even pressure when rolling the sharpener along the blade.
- Excessive metal residue on discs: This is normal during sharpening. Clean the discs regularly as described in the Maintenance section.
