1. Product Overview

The BANLICALI 6L Black Garlic Fermenter is an automatic intelligent fermentation box designed for preparing black garlic, sweet rice wine, natto, and yogurt. 3. Setup Instructions

  1. Unpack all components from the packaging.
  2. Ensure the inner pot is clean and dry before placing it into the main fermenter unit.
  3. Place the stainless steel garlic rack inside the inner pot. The rack is designed with a door buckle to prevent garlic from slipping and ensure stability during fermentation.
  4. For black garlic fermentation, use fresh, raw garlic or garbanzos. Do not peel or wash the garlic. Trim off any excess stalks.
  5. Arrange the garlic flat on the mesh shelves of the rack, shaking them gently to ensure even placement and air circulation.
  6. Close the lid of the fermenter and connect the power cord to a 110V 60HZ power outlet.

4. Operating Instructions

The fermenter features an intelligent control panel for easy operation:

  1. Power On: After connecting the power cord, the unit will enter standby mode.
  2. Select Function: Press the "Function" button repeatedly to cycle through available fermentation modes (e.g., Solo Garlic, Garlic, Yogurt, Natto, Sweet Rice Wine, Fruit Vinegar, Enzyme, Pickles, Sourdough, Heat Preservation, Drying, Disinfection). Each function has a default operating time and temperature.
  3. Adjust Time: Once a function is selected, press the "Time" button to adjust the fermentation duration. The display will show units in "H" (hours) or "d" (days) depending on the function. For black garlic, the typical fermentation time is 7-12 days.
  4. Adjust Temperature: Press the "Temperature" button to modify the fermentation temperature if needed. Different functions have specific temperature ranges.
  5. Start Fermentation: After setting the desired function, time, and temperature, the unit will automatically begin the fermentation process. The display will show the remaining time.
  6. Power-off Memory: If power is interrupted during fermentation, the machine will automatically resume the process from where it left off once power is restored.
  7. Cancel/Reset: To reset the machine or cancel the current operation, press and hold the "Cancel" button for 3 seconds.

After 7-12 days of fermentation for black garlic, it can be opened and served. If there is still too much moisture, the drying function can be used to enhance the fermentation effect.

5. Maintenance and Cleaning

Proper cleaning ensures the longevity and hygiene of your fermenter:

  • Always unplug the fermenter and allow it to cool down completely before cleaning.
  • The inner pot and garlic shelf can be removed for separate cleaning.
  • Rinse the inner pot and garlic shelf with water or wash with a small amount of mild detergent.
  • If any residue is stuck to the inner pot or garlic rack, soak them in hot water for approximately 10 minutes before washing.
  • The garlic rack is dishwasher safe.
  • Wipe the exterior of the fermenter unit with a damp cloth. Do not immerse the main unit in water.
  • Ensure all parts are thoroughly dry before reassembling or storing the unit.

6. Troubleshooting

If you encounter issues with your fermenter, refer to the following common solutions:

  • Fermentation not starting: Verify that a function, time, and temperature have been selected. Press the appropriate button to initiate the process. If the unit was previously running and power was interrupted, it should resume automatically.
  • Garlic not fermenting properly: Ensure the garlic is fresh and arranged evenly on the rack for optimal air circulation. Check that the lid is properly closed. Verify that the selected fermentation time and temperature are appropriate for black garlic (typically 7-12 days).
  • Excess moisture after fermentation: Use the drying function to reduce moisture content in the fermented black garlic.
  • Unusual odors: Ensure the unit and all components are thoroughly cleaned after each use to prevent residual odors.
