Setup and Assembly
The smoke cabinet requires assembly. Follow these steps carefully:

Operating Instructions
Preparing the Cold Smoke Generator:
- Fill with Sawdust: Fill the cold smoke generator with sawdust or wood chips (1 kg wood chips included). Ensure the sawdust is dry and packed loosely enough for air circulation.
- Light the Sawdust: Use a tea light or a small torch to ignite the sawdust in one corner of the generator. Allow it to burn for a few minutes until it starts to smolder and produce smoke.
- Remove Tea Light: Once the sawdust is smoldering consistently, carefully remove the tea light. The square, compact mesh design of the generator is intended to allow the smoke chips to burn evenly and slowly for up to 12 hours.
- Place in Cabinet: Position the smoldering cold smoke generator inside the smoke cabinet.
Smoking Process:
- Prepare Food: Prepare your meat, fish, sausage, or other items for smoking. Ensure they are properly cured or brined if required for cold smoking.
- Load Cabinet: Place the food items on the grilles or hang them from the S-hooks inside the smoke cabinet. Ensure there is adequate space between items for smoke circulation.
- Monitor Temperature: The smoke cabinet is equipped with a thermometer to monitor the internal temperature. For cold smoking, maintain a low temperature, typically below 30°C (86°F), to prevent cooking the food.
- Observe Progress: Utilize the glass window to observe the food and smoke levels without opening the door, which helps maintain a consistent smoking environment.
- Smoking Duration: The duration of smoking depends on the type of food and desired flavor intensity. Refer to specific recipes or guidelines for cold smoking.
Maintenance and Care
- Cleaning: After each use, allow the smoke cabinet and generator to cool completely. Remove ash and unburnt sawdust from the generator. Clean the interior of the smoke cabinet, grilles, and S-hooks with warm soapy water. Rinse thoroughly and dry completely to prevent rust.
