5. Operating Instructions

5.1 Fuel Types

This oven is designed to operate with wood, charcoal, or wood pellets. Using a combination of these fuels can help achieve desired temperatures and flavors.

5.2 Ignition and Preheating

  1. Load Fuel: Place a small amount of kindling (e.g., paper, small wood chips) and your chosen fuel (wood, charcoal, or pellets) into the lower combustion chamber.
  2. Ignite: Carefully ignite the kindling. Allow the fire to establish and the fuel to burn consistently.
  3. Preheat: Close the combustion chamber door and the main oven door. Allow the oven to preheat for approximately 5-10 minutes. The pizza stone should be placed on the lower level for optimal heat absorption.
  4. Temperature Check: While the oven does not have a built-in thermometer, you can monitor the heat by observing the flames and the color of the interior. For pizza, aim for a high temperature.

Image 5.2: The oven is capable of rapid preheating and high temperatures for quick cooking.

5.3 Temperature Control

Adjust the airflow to control the oven's temperature:

  • Vents: Both the combustion chamber door and the chimney have adjustable vents. Opening them increases airflow, leading to higher temperatures. Closing them reduces airflow, lowering the temperature.
  • Fuel Management: Add small amounts of fuel periodically to maintain desired heat. Avoid overfilling the combustion chamber.

5.4 Cooking

The 2-layer design allows for versatile cooking. The lower level, with the pizza stone, is ideal for pizzas due to higher temperatures. The upper rack is suitable for grilling other items.

  • Pizza: Once preheated, use the pizza peel to slide your pizza onto the hot pizza stone. Cook for 2-5 minutes, rotating as needed for even cooking.
  • Other Foods: Use the upper cooking rack for items like steak, sausage, chicken wings, or vegetables. The removable rack accommodates larger items like whole chickens.

6. Maintenance and Care

6.1 Cleaning

  • Cool Down: Always ensure the oven is completely cool before attempting any cleaning.
  • Ash Removal: Remove ash from the combustion chamber after each use.
  • Pizza Stone: Scrape off any burnt food residue from the pizza stone. Do not use soap or harsh detergents, as they can be absorbed and affect food taste. Wipe with a damp cloth if necessary and allow to air dry completely.
  • Exterior: Wipe the exterior with a damp cloth. Avoid abrasive cleaners.

6.2 Storage

When not in use, store the oven in a dry place. The included waterproof cover provides protection against outdoor elements.

7. Troubleshooting

  • Difficulty Reaching High Temperatures:
Solution: Ensure vents are fully open for maximum airflow. Check if the chimney is clear of obstructions. Use dry, seasoned wood or high-quality charcoal/pellets. Add more fuel gradually.
  • Uneven Cooking:
Solution: Rotate food frequently, especially pizzas, using the pizza peel. Ensure the oven has fully preheated before placing food inside. Adjust fuel distribution in the combustion chamber.
  • Excessive Smoke:
Solution: Use dry, seasoned fuel. Ensure proper airflow by opening vents. Avoid overfilling the combustion chamber.
  • Door Warping:
Note: Some minor warping of metal components can occur due to high heat, which typically returns to shape upon cooling. This is generally not a functional issue.
