Setup and Installation

  1. Unpacking: Carefully remove the fryer from its packaging. Inspect for any shipping damage. Report any damage to the carrier immediately.
  2. Placement: Position the fryer on a level, non-combustible surface. Ensure adequate clearance from walls and other equipment for ventilation and maintenance. The fryer dimensions are approximately 21 inches wide, 34.25 inches deep, and 47.12 inches high.
  3. Leveling: Adjust the adjustable legs to ensure the fryer is perfectly level. This is crucial for even cooking and proper oil drainage.
  4. Gas Connection: This unit operates on Liquid Propane (LP) gas. Connect the fryer to a regulated LP gas supply line. All gas connections must be performed by a licensed and qualified technician in accordance with local codes and national standards (e.g., NFPA 54/ANSI Z223.1). Ensure all connections are leak-tested using a soap solution.
  5. Ventilation: Install the fryer under an appropriate commercial exhaust hood system to ensure proper ventilation and removal of cooking fumes.
  6. Initial Cleaning: Before first use, clean the fry pot and all accessories (baskets) with warm soapy water, rinse thoroughly, and dry completely.

Operating Instructions

  1. Filling the Fry Pot: Ensure the drain valve is closed. Fill the fry pot with cooking oil to the indicated "MIN" and "MAX" fill lines. Do not overfill or underfill. The fry pot has a 70-100 lb capacity.
  2. Ignition: Follow the specific ignition procedure outlined on the fryer's control panel or inside the access door. Generally, this involves turning the gas supply on, lighting the pilot light, and then turning the main burner control to the "ON" position.
  3. Temperature Setting: Use the thermostat control to set the desired cooking temperature, which can be adjusted between 200-400 degrees Fahrenheit. Allow the oil to reach the set temperature before adding food.
  4. Frying: Carefully place food into the fry baskets and lower them into the hot oil. Do not overload baskets, as this can lower oil temperature and result in soggy food.
  5. Draining Oil: When it's time to change or filter the oil, ensure the fryer is off and the oil has cooled to a safe temperature (below 100°F / 38°C). Open the full port drain valve to drain the oil into a suitable container.

Maintenance and Cleaning

Regular maintenance and cleaning are crucial for the longevity and optimal performance of your fryer.

  • Daily Cleaning: After each use, once the oil has cooled, wipe down the exterior surfaces with a damp cloth and mild detergent. Clean the fry baskets.
  • Oil Filtration/Replacement: Filter the cooking oil daily to remove food particles and extend its life. Replace oil regularly based on usage and quality.
  • Deep Cleaning: Periodically, perform a deep clean of the fry pot. Drain all oil, remove any sediment, and clean the interior with a non-abrasive cleaner designed for fryers. Rinse thoroughly and dry. Ensure all stainless steel surfaces (tank, door, front, top, ledge, header) are cleaned to maintain their finish.
  • Burner Maintenance: Regularly inspect the burner tubes and pilot light for any blockages or debris. Clean as necessary. This should ideally be done by a qualified technician.
