Operating Instructions

Deep Frying Turkey (30QT Pot)

  1. Prepare the Turkey: Ensure the turkey is completely thawed and dry. Remove giblets and neck. Pat dry thoroughly, inside and out, to prevent oil splatter.
  2. Determine Oil Level: Place the turkey in the empty 30QT pot. Fill with water until the turkey is just covered. Remove the turkey and note the water level. This is your approximate oil fill line. Dry the pot completely before adding oil.
  3. Add Oil: Fill the pot with peanut oil or other high smoke point oil up to the determined level. Do not exceed the maximum fill line marked on the pot.
  4. Heat Oil: Place the pot on the propane stove. Connect the regulator to a propane tank. Slowly open the gas valve on the tank, then ignite the burner. Gradually heat the oil to 350°F (175°C), monitoring with the included probe thermometer.
  5. Lower Turkey: Once the oil reaches 350°F (175°C), turn off the burner. Slowly and carefully lower the turkey into the hot oil using the turkey rack and rack lifter. This must be done very slowly to prevent boil-over.
  6. Fry Turkey: Re-ignite the burner. Maintain the oil temperature at 325°F (163°C). Fry for approximately 3.5 minutes per pound, or until the internal temperature of the turkey reaches 165°F (74°C) in the thickest part of the thigh.
  7. Remove Turkey: Turn off the burner. Carefully lift the turkey from the oil using the rack lifter. Allow excess oil to drain before transferring the turkey to a carving platter.

Frying Fish/Seafood (10QT Pot)

  1. Prepare Food: Pat fish or seafood dry.
  2. Add Oil: Fill the 10QT pot with oil, ensuring it does not exceed the maximum fill line.
  3. Heat Oil: Heat oil to the desired frying temperature (e.g., 350-375°F / 175-190°C).
  4. Fry Food: Carefully place food into the small basket and slowly lower into the hot oil. Fry until golden brown and cooked through.
  5. Remove Food: Lift the basket from the oil and allow excess oil to drain.

Maintenance

Cleaning

  1. Cool Down: Allow the oil to cool completely before attempting to clean.
  2. Dispose of Oil: Safely dispose of used cooking oil according to local regulations.
  3. Wash Pots and Baskets: Wash the aluminum pots and baskets with warm, soapy water. Use a non-abrasive sponge or cloth to prevent scratching.
  4. Clean Stove: Wipe down the propane stove stand and burner with a damp cloth. Ensure no oil residue remains.
  5. Dry Thoroughly: Dry all components completely before storage to prevent corrosion.

Storage

Store the fryer kit in a cool, dry place, away from direct sunlight and moisture. Ensure all components are clean and dry before storage.
