3. Package Contents

4. Assembly Instructions
Assembly of the Westinghouse Bullet Smoker is straightforward. Follow these steps for proper setup:
- Attach the four legs to the base of the smoker body using the provided hardware. Ensure they are securely fastened to provide a stable foundation.
- Install the side access door onto the smoker body.
- Secure the handles to the sides of the smoker body and to the lid.
- Insert the thermometer into the designated opening on the lid.
- Place the adjustable air vent mechanism onto the lid.
- Position the charcoal pan and grate at the bottom of the smoker.
- Place the water bowl above the charcoal pan.
- Insert the two porcelain-coated cooking grates into their respective support brackets within the smoker body.

5. Operating Instructions
5.1. Preparation for Smoking
- Place charcoal briquettes or lump charcoal onto the charcoal grate.
- Add desired wood chips (soaked or dry, depending on preference) directly onto the hot charcoal for smoke flavor.
- Fill the water bowl with water, broth, or other liquids to add moisture and flavor to your food.
5.2. Lighting the Charcoal
Use a charcoal chimney starter or appropriate fire starters to ignite the charcoal. Once the charcoal is ash-covered, carefully transfer it to the charcoal pan at the bottom of the smoker.

5.3. Temperature Control
The integrated thermometer on the lid allows you to monitor the internal temperature. Adjust the air vent on the lid to control airflow, which directly impacts the cooking temperature. Opening the vent increases airflow and temperature, while closing it reduces airflow and temperature.
5.4. Smoking Food
Place food on the porcelain-coated cooking grates. The smoker features 370 square inches of cooking surface across two grates, allowing for ample capacity. Close the lid and monitor the temperature. Use the side access door to add more wood chips or water as needed without lifting the main lid, which helps maintain consistent internal temperature.
5.5. Direct Charcoal Grilling
For direct grilling, remove the upper smoker body section and water bowl. Place the cooking grate directly over the charcoal pan. This configuration allows for high-heat grilling of items like steaks, burgers, or chicken pieces.

6. Maintenance and Care
Proper maintenance ensures the longevity and performance of your Westinghouse Bullet Smoker.
- Cleaning: After each use, allow the smoker to cool completely. Remove cooking grates, charcoal pan, and water bowl. Clean grates with a grill brush. Wash the water bowl and charcoal pan with warm, soapy water. Wipe down the interior and exterior of the smoker body with a damp cloth.
- Rust Prevention: The smoker features a rust-resistant design. To further protect it, ensure it is clean and dry before storage. Consider using a grill cover when not in use, especially in humid environments.
- Storage: Store the smoker in a dry, protected area when not in use.
7. Troubleshooting
If you encounter issues with your smoker, consider the following common solutions:
- Temperature too low: Ensure adequate charcoal is present. Open the air vent on the lid to increase airflow. Check for blockages in the air intake.
- Temperature too high: Close the air vent slightly to reduce airflow. Avoid opening the lid frequently.
- Insufficient smoke: Add more wood chips to the charcoal. Ensure wood chips are properly smoldering, not burning too quickly.
- Food drying out: Ensure the water bowl is filled. Consider adding more liquid to the water bowl during long smoking sessions.
