5. Setup and Assembly
- Unpacking: Carefully remove all components from the packaging. Retain packaging for future transport or storage.
- Placement: Position the machine on a sturdy, level, and clean surface capable of supporting its weight (approx. 350 lbs / 159 kg). Ensure adequate space around the machine for operation and maintenance.
- Cleaning: Before first use, thoroughly clean all parts that will come into contact with food (cylinder, piston, filling tubes) with warm soapy water, rinse, and sanitize.
- Attach Filling Tube: Select the desired filling tube size (16mm, 19mm, or 25mm) and securely attach it to the outlet nozzle.
- Power Connection: Ensure the power switch is in the "OFF" position. Connect the power cord to the machine and then to a grounded 110V/60Hz electrical outlet.

6. Operating Instructions
- Prepare Meat Mixture: Ensure your sausage meat mixture is properly prepared and chilled.
- Load Cylinder: Open the cylinder lid and carefully load the meat mixture into the stainless steel cylinder. Do not overfill. Close and secure the lid.
- Prepare Casings: Prepare your sausage casings (natural or artificial) according to their specific instructions. Slide the casing onto the chosen filling tube, gathering it towards the base of the tube.
- Power On: Turn the main power switch to the "ON" position.
- Adjust Speed: Use the variable speed control knob on the control panel to set the desired filling speed. Start with a lower speed and adjust as needed.
- Start Filling: Gently press the knee control switch to activate the hydraulic piston. The piston will descend, pushing the meat mixture through the filling tube into the casing.
- Control Filling: Use the knee switch to control the flow of meat. Release the switch to stop the flow. Guide the casing off the tube as it fills, twisting or tying to form individual sausages.
- Refill: Once the cylinder is empty, turn off the machine, open the lid, and refill with more meat mixture.
- Completion: After filling is complete, turn off the machine and unplug it from the power outlet.

7. Maintenance and Cleaning
Regular cleaning and maintenance are crucial for the longevity and hygienic operation of your sausage stuffer.
- Daily Cleaning:
- Always unplug the machine before cleaning.
- Disassemble the cylinder, piston, and filling tubes.
- Wash all food-contact parts with warm water and a mild detergent. Use a brush to remove any stubborn meat residue.
- Rinse thoroughly with clean water and sanitize.
- Allow all parts to air dry completely before reassembly or storage.
- Wipe down the exterior of the machine with a damp cloth. Do not use abrasive cleaners or immerse the main unit.
- Periodic Maintenance:
- Inspect the power cord for any signs of damage.
- Check seals and gaskets for wear and tear. Replace if necessary to prevent leaks.
- Ensure all bolts and fasteners are tight.

8. Troubleshooting
Refer to this section for common issues and their potential solutions.
| Problem | Possible Cause | Solution |
|---|---|---|
| Machine does not power on. | Not plugged in; power switch off; circuit breaker tripped. | Check power cord connection; ensure power switch is ON; reset circuit breaker. |
| Piston not moving or moving slowly. | Speed setting too low; air trapped in hydraulic system; motor issue. | Adjust speed knob; cycle piston up and down a few times to release air; contact support if issue persists. |
| Uneven filling or air pockets in sausages. | Meat mixture too coarse or inconsistent; air trapped in cylinder. | Ensure meat mixture is uniform; pack meat tightly into cylinder to minimize air. |
| Meat leaking from cylinder lid. | Lid not properly secured; worn gasket. | Ensure lid is tightly closed; inspect and replace gasket if damaged. |
