1. Introduction

This manual provides essential information for the safe and efficient operation, installation, and maintenance of your Iron Range IRCO-1 Full Size Gas Convection Oven. Please read this manual thoroughly before installation and use, and keep it for future reference.

The Iron Range IRCO-1 is a robust single-deck commercial gas convection oven designed for high-volume foodservice establishments. It features a stainless steel construction, a forced-air two-speed fan motor, and electronic controls for precise temperature management.

2. Safety Information

WARNING: Improper installation, adjustment, alteration, service, or maintenance can cause property damage, injury, or death. Read the installation, operating, and maintenance instructions thoroughly before installing or servicing this equipment.

  • Ensure all gas and electrical connections are performed by qualified personnel in accordance with local codes.
  • Do not store or use gasoline or other flammable vapors and liquids in the vicinity of this or any other appliance.
  • Keep the appliance area clear and free from combustible materials.
  • The oven surfaces become hot during operation. Use caution to avoid burns.
  • The double-pane glass doors have an interlock switch that automatically turns the fan and burners off when they are opened. Do not bypass this safety feature.
  • All Convection ovens carry ETL approval for gas and sanitation, meeting USA requirements for food service use.

3. Setup and Installation

Before beginning installation, ensure the oven is placed on a level, stable surface capable of supporting its weight (approximately 579 pounds). Allow adequate clearance around the oven for ventilation and servicing.

3.1 Unpacking

Carefully remove the oven from its packaging. Inspect for any shipping damage. Report any damage immediately to the carrier and your dealer.

3.2 Caster Kit Installation

The unit includes a 6-inch caster kit (two with lock, two without). Attach the casters to the angular legs of the oven. Ensure the locking casters are positioned at the front for stability.

3.3 Gas Connection

The oven is shipped for natural gas but includes an LPG (propane) conversion kit. A 3/4-inch NPT rear gas connection is required. A combination safety valve with a built-in pressure regulator is provided. Natural Gas W.C. is 4.0 inches (102 mm), and Propane Gas W.C. is 10.0 inches (279 mm). If using a flex-hose, the I.D. for a single deck should be a minimum of 3/4 inch and must comply with ANSI Z 21.69.

3.4 Electrical Connection

The oven controls require a 120V, 60Hz electrical connection. The unit comes with a 6-inch power cord and a NEMA 5-15 plug.

3.5 Initial Cleaning

Before first use, clean the interior and exterior surfaces with a mild detergent and warm water. Rinse thoroughly and dry.

4. Operating Instructions

4.1 Controls Overview

  • Temperature Knob: Adjusts the oven temperature from 150°F to 550°F.
  • 60-Minute Timer: Features a continuous ring and manual shut-off.
  • Temperature Ready Indicator Light: Illuminates when the oven has reached the set temperature.
  • Fan Motor: 1/2 HP two-speed fan motor for even heat distribution.

4.2 Preheating the Oven

  1. Close both oven doors securely.
  2. Turn the temperature knob to the desired cooking temperature.
  3. Allow the oven to preheat until the temperature ready indicator light illuminates.

4.3 Loading and Unloading

  • The oven features 10-position rack guides with 1.5-inch spacing and 5 heavy-duty adjustable chrome-plated oven racks.
  • Use appropriate oven mitts when placing or removing items from the hot oven.
  • Opening the doors will activate the interlock switch, turning off the fan and burners. Close the doors promptly to resume operation.

4.4 Using the Timer

Set the 60-minute timer by rotating the knob to the desired duration. The timer will ring continuously when the time expires. It can be manually shut off.

5. Maintenance and Cleaning

Regular cleaning and maintenance will ensure the longevity and optimal performance of your convection oven.

5.1 Daily Cleaning

  • Allow the oven to cool completely before cleaning.
  • The oven features an easy-to-clean full porcelain oven interior with seamless Nano Porcelain interior and corners for chip resistance.
  • Remove oven racks and clean them separately with warm, soapy water.
  • Wipe down the interior with a damp cloth and mild, non-abrasive cleaner. For stubborn stains, use a commercial oven cleaner suitable for porcelain surfaces, following the product instructions carefully.
  • Clean the exterior stainless steel surfaces with a stainless steel cleaner or a damp cloth.
  • Clean the glass doors with a glass cleaner.

5.2 Periodic Maintenance

  • Regularly inspect gas connections for leaks (use a soapy water solution, never an open flame).
  • Check the condition of the door gaskets for proper seal.
  • Ensure the fan motor operates smoothly and quietly.
  • Schedule professional inspection and servicing annually to ensure safe and efficient operation.
