1. Introduction

2. Important Safety Instructions

To reduce the risk of fire, electric shock, or injury when using this appliance, basic safety precautions should always be followed, including the following:

  • Read all instructions before using the oven.
  • Do not touch hot surfaces. Use handles or knobs.
  • To protect against electrical shock, do not immerse cord, plugs, or the appliance in water or other liquid.
  • Close supervision is necessary when any appliance is used by or near children.
  • Unplug from outlet when not in use and before cleaning. Allow to cool before putting on or taking off parts.

4. Setup and Installation

Follow these steps to set up your Kratos Commercial Convection Oven:

  1. Unpacking: Carefully remove the oven from its packaging. Retain packaging materials for future transport or storage.
  2. Placement: Place the oven on a stable, level, heat-resistant surface. Ensure there is adequate clearance around the oven for ventilation (minimum 4 inches from walls and other appliances). Do not block the rear vents.
  3. Power Connection: Ensure the power supply matches the oven's requirements (120V, 1600 Watts). The oven uses a standard NEMA 5-15P plug. Plug the oven directly into a dedicated grounded electrical outlet. Do not use extension cords or adapters.
  4. Initial Cleaning: Before first use, wipe down the interior and exterior surfaces with a damp cloth. The wire racks can be washed with warm, soapy water.
  5. Burn-in Process: It is recommended to run the oven empty for approximately 15-30 minutes at its maximum temperature (500°F) to burn off any manufacturing residues. Some smoke or odor may be present during this initial operation; ensure the area is well-ventilated.

5. Operating Instructions

The Kratos 29M-002 oven features user-friendly dial controls for time and temperature.

5.1. Preheating the Oven

  1. Ensure the oven is plugged into a suitable power outlet.
  2. Turn the TEMP °F knob to the desired cooking temperature (range: 150°F to 500°F).
  3. Turn the TIMER MIN knob to the "ON" position or set it to a desired preheat time. The "POWER" indicator light will illuminate.
  4. Allow the oven to preheat until the "HEATING" indicator light turns off, indicating the set temperature has been reached. This may take 10-15 minutes depending on the target temperature.

5.2. Cooking

  1. Once preheated, carefully open the oven door. The dual-pane glass door remains cool to the touch, but caution is still advised.
  2. Place your half-size sheet pans with food onto the wire racks. The oven can accommodate up to four pans.
  3. Close the oven door securely.
  4. Set the TIMER MIN knob to the desired cooking time. The timer will count down and ring when finished. For continuous operation, turn the timer past the 60-minute mark to the "STAY ON" position.
  5. Monitor cooking progress through the glass door. Avoid opening the door frequently to maintain consistent oven temperature.
  6. When cooking is complete, turn the TEMP °F knob to "OFF" and the TIMER MIN knob to "OFF" or allow the timer to complete.
  7. Carefully remove cooked items using oven mitts.

6. Cleaning and Maintenance

Regular cleaning and maintenance will ensure the longevity and optimal performance of your Kratos convection oven.

  • Always unplug the oven and allow it to cool completely before cleaning.
  • Exterior: Wipe the stainless steel exterior with a damp cloth and mild detergent. For stubborn stains, use a stainless steel cleaner. Dry thoroughly to prevent water spots.
  • Interior: Remove the wire racks. Wipe the interior surfaces with a damp cloth and mild, non-abrasive cleaner. For baked-on food, a paste of baking soda and water can be applied, left for a few minutes, then wiped clean. Avoid using abrasive pads or harsh chemicals that could damage the interior finish.
  • Wire Racks: The wire racks can be washed in a sink with warm, soapy water. Rinse thoroughly and dry before returning to the oven.
  • Glass Door: Clean the dual-pane glass door with a glass cleaner or a damp cloth. Avoid scratching the glass.
  • Fan Cover: Periodically check the convection fan cover for grease buildup and clean as necessary to ensure proper airflow.

7. Troubleshooting Guide

If you encounter issues with your Kratos convection oven, refer to the following common problems and solutions:
