Before First Use

  1. Always read all instructions and safeguards before operation.
  2. Remove all packaging materials and check that all parts are present and in good condition before discarding packaging.
  3. Wash the freezing canister, dasher, and lids in warm soapy water. Rinse and dry thoroughly.
  4. Wipe the wooden bucket, electric motor, hand crank, and power cord with a damp cloth to wipe clean.
  5. For brand new wooden machines, fill the wooden bucket 2/3 full of water. Allow to sit for 1-2 hours. This allows the wood to expand and swell up, sealing any seams in between staves. This process helps prevent leaks during ice cream making.

WARNING: DO NOT IMMERSE THE ELECTRIC MOTOR, HAND CRANK, OR POWER CORD IN WATER OR ANY OTHER LIQUID AT ANY TIME.

Setup

Follow these steps to assemble your ice cream maker:

  1. Prepare your desired ice cream mixture according to a recipe. Ensure the mixture is chilled before adding it to the canister.
  2. Pour the prepared and chilled ice cream mixture into the Freezing Canister (9). Do not fill more than 2/3 full to allow for expansion during freezing.
  3. Insert the Dasher (11) into the Freezing Canister (9), ensuring it is properly seated at the bottom.
  4. Place the Canister Lid (7) on top of the Freezing Canister (9), making sure the dasher shaft protrudes through the center hole of the lid.
  5. Place the Freezing Canister (9) with the dasher and lid into the center of the Wooden Bucket (5).
  6. Place the Stabilizing Ring (6) around the top of the Freezing Canister (9) to hold it securely in the center of the Wooden Bucket (5).
  7. Fill the space between the Freezing Canister and the Wooden Bucket with alternating layers of ice and rock salt. Use approximately 5 lbs of ice and 1 cup of rock salt per layer. Continue layering until the ice and salt reach the top of the canister.

Operating Instructions

Using the Electric Motor

  1. Place the Electric Motor (2) onto the Wooden Bucket (5), aligning the motor shaft with the dasher shaft. Ensure the latches (3) on the motor securely engage with the handles on the bucket.
  2. Plug the Power Cord (4) into a standard electrical outlet.
  3. Turn the motor ON. The dasher will begin to rotate, churning the ice cream mixture.
  4. Churning typically takes 35-60 minutes, depending on the recipe and desired consistency. The motor may stop automatically when the ice cream reaches a firm consistency.
  5. Once churning is complete, turn the motor OFF and unplug the power cord.

Using the Manual Hand Crank

  1. If using the hand crank, place the Hand Crank (1) assembly onto the Wooden Bucket (5), aligning its shaft with the dasher shaft. Ensure the latches securely engage with the handles on the bucket.
  2. Begin turning the hand crank steadily. Continue cranking until the ice cream reaches the desired consistency. This may take longer than electric churning and requires continuous effort.
  3. Once churning is complete, remove the hand crank assembly.

After Churning

  1. Remove the motor/hand crank assembly and the canister lid.
  2. Carefully lift the Freezing Canister out of the Wooden Bucket. Remove the dasher from the ice cream.
  3. For firmer ice cream, transfer the ice cream to an airtight container and place it in the freezer for 2-4 hours to harden further.

Note on dasher and canister movement: The indentation on the top lip of the freezing canister is intentional and designed to assist in the churning of the paddle when the drive gear is built into the lid. The frozen ice cream is scraped off by the paddle/dasher as the canister turns. The paddle/dasher is stationary and does not turn.
