4. Operating Instructions

Always exercise caution when sharpening blades. Maintain a consistent angle and use light, even pressure for best results. It is recommended to use the sharpener dry.

4.1. Using the Diamond Sharpening Plate (400 Grit - Coarse)

The 400-grit side is for restoring very dull blades or repairing minor edge damage.

  1. Hold the sharpener firmly by its handle on a stable surface.
  2. Place the blade of the knife flat against the 400-grit diamond surface, ensuring a consistent sharpening angle (typically 15-20 degrees for most kitchen knives).
  3. With light, even pressure, pull the blade across the entire length of the diamond surface, moving from the heel to the tip of the blade.
  4. Repeat this motion on both sides of the blade until a slight burr forms along the edge.

4.2. Using the Diamond Sharpening Plate (1000 Grit - Fine)

The 1000-grit side is for refining the edge after coarse grinding and for general maintenance to keep blades sharp.

  1. After coarse grinding, switch to the 1000-grit diamond surface.
  2. Maintain the same consistent sharpening angle as used with the 400-grit side.
  3. With very light pressure, pull the blade across the 1000-grit surface, alternating sides.
  4. Repeat until the burr is removed and the edge is polished and sharp.

  1. Scissors Slot:
    • Open the scissors and insert one blade into the designated scissors slot in the handle.
    • Pull the blade through the slot gently, from the pivot to the tip.
    • Repeat for the other blade. Perform 3-5 pulls per blade.
  2. Coarse Slot (Tungsten Steel): For quick sharpening of very dull knives.
    • Place the knife blade into the 'Coarse Slot' (left waist of the handle).
    • Pull the knife through the slot in one direction (e.g., towards you) with moderate pressure.
    • Repeat 3-5 times.
  3. Fine Slot (Ceramic): For polishing and removing burrs after coarse sharpening.
    • After using the coarse slot, place the knife blade into the 'Fine Slot' (right waist of the handle).
    • Pull the knife through with light pressure.
    • Repeat 3-5 times.

5. Maintenance

Proper maintenance ensures the longevity and effectiveness of your sharpening plate.

  • Cleaning: After each use, wipe the diamond surfaces and slots with a damp cloth to remove metal particles and debris.
  • Drying: Always dry the sharpening plate thoroughly after cleaning. Do not store it wet.
  • Storage: Store the sharpener in a dry area to prevent corrosion.
  • Dry Use Recommendation: The manufacturer recommends using the diamond sharpening plate dry. While water or oil may enhance effectiveness, they can also increase the risk of corrosion over time.
